This exquisite looking low carb ratatouille is an easy low carb recipe and isn’t as difficult as you think you’ll put together! It’s a delicious and elegant side dish to go with any appetizer you’re enjoying or perfect for brunch or holidays!

Ratatouille is a stewed vegetable dish specialised in the Naisse, France and Provence regions. Usually there are eggplant, tomatoes, onions, green or red chili peppers, zucchini, garlic and of course Provence herbs.
The word ratatouille comes from the French term “Twiler.” This means throwing food. It can be heated in the oven, at room temperature or as a nice cold side dish.
Use it as a simple side dish, appetizer, or add it to a charcoal grilled platter for a party. Even if it’s added to the salad, it’s welcome.
Usually it’s a stewed dish made on a stove, but my version is beautiful in a baked, cast iron frying pan and as tasty as the stewed version.


Customizable Ratatouille Recipes
My low-carb version of this recipe eliminates eggplant and peppers, especially since you have to avoid histamine foods. Here you can see tomatoes, which are also a histamine-rich food, but just removed it from the plate when served.
Feel free to add eggplant slices and peppers to the version. Some versions of ratatouille add tomato sauce to the bottom of the dish before stacking the vegetables.
We recently took a Mediterranean cruise with my family, parents and siblings, visiting Cannes, Marseille and Sete in France, as well as Rome, Naples, Florence, Sicily Italy, Malta and Barcelona to Spain!
It was amazing to see four different countries in 10 days!
I haven’t written about our trip yet and what I ate, but I’ll start right away. I’m Italian, raised by my father from Rome. It was a great experience to see so many different cultures. This recipe was inspired by my European trip. Enjoy!

Preheat the oven to 375°F.
Slice zucchini, squash, onion and tomatoes about 1/8-1/4 inch slices. Please put it aside.
Pour 1 tablespoon of oil into a 9-inch cast iron skillet or a round pie dish. Layer spiral vegetable slices around the pan.
Mix the remaining oil and garlic and polish the vegetable layer. Sprinkle Provence, salt and pepper with herbs and bake for 40-45 minutes until the vegetables look soft and fork is tender.
Sprinkle optional grated Parmesan over the oven once if necessary. Covered in the fridge for up to 5 days.
