I’m all about making good, unique recipes, but I’ve forgotten about a simple recipe that’s often our favorite meal and this is one of them, a simple recipe I’ve never posted on my blog.

I stuffed eggplants and I also made low-carb, 3 cheese eggplant rolled up lasagna. However, eggplants are not as popular as zucchini because they are either a vegetable you like or dislike.

So I stuff my zucchini into a taco night and love it. It’s also a great way to run out of zucchini if ​​you have a garden and are overloaded. I’m doubled the meat in the taco so half fills you up and satisfy you, adds a salad and a nice dinner or lunch!

If you like zucchini, you can use only a portion of the filling to fill only the zucchini for yourself and your spouse. Use the remaining stuffing to make tacos for the kids. Try my cheap low carb shells.

I wanted extra stuffing for the kids so I used more ground turkey than the recipe I needed. The remaining ingredients have also doubled. I love falling for a quick lunch this week.

I used the rest of the taco filling to use for kids to make taco salads or with gluten-free tortillas and your favorite taco pickup.

Optional toppings

Sour cream, coriander, green onions, fresh tomatoes

Preheat the oven to 400°F.

Scoop out the insides of the fresh zucchini with a small spoon or melon baller and cut them out.

Add the chopped zucchini to a large skillet.

Place the scooped zucchini shells in a 9 x 13 baking dish. (If you prefer a softer zucchini, place this dish in the oven and cook for about 15 minutes, then scoop the cooked stuffing into a zucchini boat and bake it facing down).

Cook the chopped zucchini over medium heat with olive oil and garlic and add the turkey.

Once the turkey is brown, add seasonings, salsa and 1 cup cheese.

Continue cooking until the cheese melts.

Fill the zucchini with this ground meat mixture and top with the remaining cheese.

Cover and bake for 20-25 minutes or until zucchini is tender.
