Low Carb Keto Stuffed Zucchini Boat Recipes
Vegetable stuffing… It’s something. You can find a million different ways to stuff other vegetables like zucchini, eggplant, spaghetti squash, and tomatoes in the summer with delicious stuffing!
I’m all about making good, unique recipes, but I’ve forgotten about a simple recipe that’s often our favorite meal and this is one of them, a simple recipe I’ve never posted on my blog.
I stuffed eggplants and I also made low-carb, 3 cheese eggplant rolled up lasagna. However, eggplants are not as popular as zucchini because they are either a vegetable you like or dislike.
So I stuff my zucchini into a taco night and love it. It’s also a great way to run out of zucchini if you have a garden and are overloaded. I’m doubled the meat in the taco so half fills you up and satisfy you, adds a salad and a nice dinner or lunch!

Low Carb Tacos on Tuesday
Let’s face it. When you’re on a low carb or keto diet, traditional tacos are not the best low carb option.
Between the shells and white bean-like sides of the taco, there is a massive carb count, and kicking you out of ketosis will definitely drive you out.
This is a great recipe for anyone following a low carb diet that wants to enjoy a taco night with their family.
Plus, we have our own homemade taco seasonings that come together very quickly and can be stored for a quick Mexican dinner. All nutritional information is available at the bottom of the printable recipe card page.

Taco Zucchini Boat Recipes
If you like zucchini, you can use only a portion of the filling to fill only the zucchini for yourself and your spouse. Use the remaining stuffing to make tacos for the kids. Try my cheap low carb shells.
I wanted extra stuffing for the kids so I used more ground turkey than the recipe I needed. The remaining ingredients have also doubled. I love falling for a quick lunch this week.
I used the rest of the taco filling to use for kids to make taco salads or with gluten-free tortillas and your favorite taco pickup.
This was everyone’s victory!
The cheap taco filling is dynamite! Stuffed zucchini is a delicious way to use seasonal vegetables. Using this stuffing, if you’re not participating in zucchini, you can stuff it with another vegetable, such as peppers.
