Chocolate lava cake or melted chocolate cake is a combination of powderless cake and soufflé. Decaying, tasty, oozing liquid chocolate melting centers are the name of chocolate lava cakes because they resemble lava in nature.
Trader Joe’s regular lava cake recipes come in 41 grams of total carbohydrates and 25 grams of sugar, according to App Cronolonmeter.

How to replace the Keto Sweeteners you use
One of my new favorite low-carb sweeteners that don’t leave behind an aftertaste is the monkfruit allurose blend.
There is a powdered sweetener from the sweets, and there is also a granulation option. It has a lot of sweetness, as sugar provides.
The Swerve Confectioners Sweetener is also low in carbohydrate, but not very sweet. You may need to use this a little more and sweeten it as much as you like.
Many people don’t want to use Swerve because it contains erythritol. Recent research has shown that people with certain health conditions can cause blood clots. So I use monk fruit, aria loin and stevia in my recipe.
Allureus is another option in itself, but rather not as sweet as using the monkfruit allureus blend sweetener. Allureus contains liquid and granular form.

Tools for making keto lava cakes
Stand Mixer My Stand Mixer is used in most recipes.
Glass Bowls – These glass bowls can be used to melt chocolate and butter on a pot of boiling water on a stove, or to melt in the microwave.
1 Cup of Lamekins – These Lamekins hold about 1 cup and make the perfect size keto chocolate lava cake! Also use it on other mug cakes, such as my one-minute chocolate cake, tiramisu mug cake, cannoli mug cake, peanut butter mug cake.
Can I exchange almond flour?
The biggest part of this sugar-free dessert is that it can be easily replaced if you are allergic to almonds or prefer not to use almond flour. It is recommended to exchange it with almond flour and sunflower seed flour as it can be exchanged equally.
Sesame flour is another option, but it’s less necessary as it has a heavier texture than sunflower seed flour or almond flour.
We do not recommend using coconut flour in this recipe. This is because it requires more eggs, liquid and more trials to get the same beautiful texture as seen in the photo.

Preheat the oven to 350°F and force the fan.
Using a stand mixer or handheld electric mixer, beat the eggs and vanilla until thick and creamy.
Place chocolate, butter and coffee in a microwave safe bowl and heat in a burst until it melts and smoothes.
Add the chocolate mixture to the eggs and beat low until combined.
Fold until well incorporated the dried ingredients (almond flour and sweeteners).
Pour the batter onto two oiled ramekins and bake for 10-15 minutes until the top is set, but still swaying. (Baking time depends on the size and shape of the ramekin.)
Sit aside for 5 minutes before improving with the serving plate.
These lava cakes should be eaten immediately and should not be kept well. It can be refrigerated, but loosen the secret chocolate centre.
