I adopted her recipe in 2020. I started with the amount of boiled eggs Maria uses in her recipe, but I found the smell to be a dead giveaway, at least for my family.

From chocolate pudding to vanilla pudding to banana pudding, to this simple recipe, which also includes my love for cottage cheese recipes!

The reason I used boiled eggs in this recipe is because I left the eggs after decorating them for Easter, but you can also use scrambled eggs.

Even if you’re not a fan of cottage cheese or eggs, the best part is that you can’t taste even with this keto strawberry pudding!

Full-fat cottage cheese is perfect for this pudding. 4% or 2% cottage cheese will give you the best results.

You can find many options for cottage cheese at local grocery stores, but certain brands differ in taste and creamy texture.

I don’t recommend cottage cheese without fat. Because I’m not satisfied enough to be full fat cottage cheese or creamy.

My daughter and I are both lactose intolerance, so I like to use lactose-free cottage cheese. My favorite brand is Green Valley Organic, but Lactaid is just as great as it is a great cultural brand.

Add collagen and optional ingredients to the blender and blend until smooth. Taste and adjust the sweetener.

Pour into 4 glasses or airtight containers and refrigerate for at least an hour.
