What is Keto Angel Food Cake?

This Keto Angel Food Cake recipe is adopted from my very popular dairy-free cloud bread recipe. It’s a completely sponge, light and fluffy cake, and easy to make!

Regular angel food cakes can be difficult to make. It’s often made from white or flour, and of course packed with sugar, so if you’re following the keto diet, it’s nothing.

I have a more traditional low carb angel food cake made from low carb, nut-free flour, so there is no almond flour and a little more material. For that cake batter, I used sesame flour instead of coconut flour.

But I knew that if you made dairy-free cloud bread, this angel food cake would be even easier and more generous than traditional angel food cake recipes.

What is dairy-free cloud bread?

For those unfamiliar with cloud bread, it is also known as oopsie bread. A low-carb bread made from just a few ingredients. It’s high protein, gluten-free, low carb, low calorie, keto-friendly, and a great option for those with dietary restrictions.

This bread dates back to the 1970s when Atkins’ diet was introduced. The texture is light and airy, resembling a textured meringue. I tried the original version using cream cheese and found it to be nothing but sticking to the roof of my mouth and not appealing at all.

I adapted my version and changed the cloud bread to a bread with a better taste and texture.

The latest version is dairy-free cloud-packed. Today we’re introducing how to turn bread into a keto strawberry angel food cake.

Are egg whites keto-friendly?

Yes, the egg whites are very keto-friendly. The egg whites from one large egg have 17 calories and 0.2 grams of carbohydrates, 3.6 grams of protein and very low fat, only .1 grams.

How to make strawberry keto angel food cake

Fresh egg whites at room temperature help to combine better and do not shrink.

Preheat the oven to 300°F.

Set the silicone bunt pan in a large baking pan and set it aside.

Place egg whites, warm water, vinegar, berry extract, and berry liquid stevia in a stand mixer and whip until a hard peak forms.

Place egg white protein powder, strawberry whey protein powder, water, confectionery, allurose and salt in a high-power blender or food processor and blend until smooth.

Once the egg whites are hard, slowly pour the blender mixture into a stand mixer on a slower speed.

White people may be a little flattered, but don’t worry. This is not a problem and the cake still rises. Once combined, pour the batter into the bunt pan.

Bake for an hour. Don’t open the oven door, turn off the oven and let the cake stay in the oven for another 5 minutes.

Remove and cool in a bunt pan on the counter for 2 hours. Then turn the cake over into baking sheet bread for an additional hour.

Carefully take a sharp knife and loosen the cake around the center tube. Now you should be able to carefully remove the cake from the Angel Food Cake Pan.

Serve with fresh berries and my strawberry whipped cream cheese frosting!

Stand with a mixer or electric hand mixer and whip the egg whites until they reach a hard peak.

Silicone band pans are unremoved tube pans that can be easily removed and help to not destroy the cake.

Can I exchange strawberry whey protein?

You can exchange strawberry whey protein with more egg white protein powder or use vanilla whey protein powder.

Can I exchange egg white protein powder?

If you want the best results of this keto angel food cake, we do not recommend filtering out egg white protein powder. I used the brand keto butterfly, and the protein powder on the egg white should work. I linked the Jay Robb brand because it was a little cheaper.

Can I rule out liquid aleurose?

I would not recommend ruleing out liquid allures as it helps to create the best chewy texture. If you are unable to get liquid allulose where you live, we recommend using granular allulose instead.

Can I replace the berry liquid stevia?

Yes, if you want to use another low carb sweetener instead of berry stevia. Using my sweetener guide and conversion charts, it helps you decide how much you want to use instead of stevia.

Best Keto Angel Food Cake Tips

The egg whites should be at room temperature. Using fresh room temperature eggs gives maximum aeration combined with warm water, making it less likely that the whip will shrink the peak once.

The warm water must be 90 degrees Fahrenheit.

Instead of using carton egg whites, use fresh eggs to ensure the best ventilation and structure.

Use white vinegar instead of the tartare cream. I’ve made many other recipes using egg whites as well as cloud whites, but it seems to help white people not shrink that much.

Use a blender or food processor for all ingredients that do not fit in a stand mixer with egg whites.

You can sift the dry ingredients together, but for best results, add all the dry ingredients to a blender or food processor and combine them thoroughly to make the texture a little smoother too.
