This healthy gluten-free potato salad is perfect for a picnic or BBQ. Substituting cauliflower for potatoes is a low-carb diet secret I learned 15 years ago.
No potato salad
Have you ever made potato salad using cauliflower instead of potatoes?
Substituting fiber-rich cauliflower for a gluten-free potato salad makes it much more nutritious and lower in carbohydrates.
A low-carb diet has worked for me because it burns fat, stabilizes blood sugar, and includes lots of nutrient-dense foods.
Low Carb Recipes
In that sense, a low-carb diet has many health benefits.
What are low carb foods?
What is a low carb diet? It avoids high carb processed foods and focuses on consuming protein, low glycemic vegetables and fats.

Cauliflower potato salad
In my Cauliflower Potato Salad, I use high fiber, nutritious cauliflower instead of high carb potatoes.
These win-win swaps and unlocking nutritious ingredients are key to my cooking.
Cauliflower Recipes
When it comes to low carb vegetarian recipes, my potato salad checks all the boxes: easy, healthy, and delicious.
It’s a busy mom’s dream, can be eaten in just 20 minutes, and features my favorite cruciferous vegetable, cauliflower.
Carbohydrates in Cauliflower
Cauliflower is an amazing superfood that I eat regularly in a variety of ways.
High Fiber Foods
It’s naturally rich in dietary fiber, vitamins B and C, and also contains phytonutrients and glucosinolates that may help prevent cancer.
Cauliflower Rice Recipe
This versatile vegetable is also a great alternative to high-carb rice. Below you’ll find some of my cauliflower rice recipes:

Instructions
Cut cauliflower into florets (1/2 inch)
Steam the cauliflower on the stove until it is tender enough to pierce with a fork. If you oversteam it, it will have a strong “cauliflower” smell.
Add celery, onion, parsley, and egg.
Mix mayonnaise, mustard and salt.

Self-care for celiac disease
How did it all begin? Life as a gluten-free pioneer hasn’t always been easy.
I was diagnosed with Celiac Disease in 1998 and at that time it was very difficult to find gluten-free recipes.
I knew I had to make it myself.
Gluten Free Recipes
Another problem is that many gluten-free recipes use unhealthy ingredients.
For example, most gluten-free breads and baked goods are made with high-carb ingredients like rice flour, potato starch, and cornmeal.
I am conscious of the benefits of a gluten-free and low-carb diet, so I use flours and ingredients that are high in healthy fats, fiber and protein.
Is potato salad gluten free?
With my “no potato salad” approach, I don’t have to ask if potato salad is gluten free because it is gluten free and low carb.
low carb dinner ideas
Here are some more of my healthy gluten free recipes for you and your family to enjoy.
These are much healthier and more nutritious than the Standard American Diet (SAD) meals, and they taste just as good.
Whether you need a veggie salad recipe, an easy chicken dinner recipe or a quick dessert recipe, you’ll find plenty of simple solutions for healthy eating below.
Rosemary chicken and lemon
This fresh and flavorful chicken marinade recipe has hints of garlic, fragrant rosemary, and refreshing lemon flavor.
All it takes is a few minutes on the grill and a delicious rosemary chicken and lemon dinner is ready.
Once you try it, this grilled chicken breasts recipe will become a staple on your menu.
Fresh frisee salad
The best salads are made with whatever fresh leafy greens I have from my garden or the farmer’s market, but this salad is so good I’ve made it over and over again.
This colorful and nutritious salad with radichio, frisée, butter lettuce and arugula is made even more delicious with my homemade salad dressing recipe.
A simple shake of Dijon mustard and red wine vinegar makes a tangy cherry (tomato) flavor on top of a fresh frisée salad.
Asparagus salad with tomato and basil
A salad isn’t always what comes to mind when looking for asparagus recipes, and this keto side dish is full of fresh garden ingredients and can be ready in under 15 minutes.
My Tomato Basil Asparagus Salad is the perfect addition to any main dish, and if you have a nightshade allergy you can leave out the tomatoes and it’s just as delicious.
Fruit Salad Recipe
Fruit salad recipes are very easy to make, the hardest part is deciding which fruit combination to use.
I often make a simple fruit salad with organic yogurt and a dash of vanilla – the combinations are endless and the results are delicious and healthy.
Ice Cream Sandwich Recipe
The combination of my best chocolate chip cookie recipe and homemade vegan vanilla ice cream is heavenly!
My ice cream sandwich recipe has been a family favorite since my boys were little.
In the past, I created an interactive activity for my boys and their friends to assemble healthy frozen treats by adding gluten free sprinkles, coconut flakes, chopped nuts, mini chocolate chips, etc. to a topping bar.
This activity is a big hit at our end of season baseball parties and is one of my absolute favorite summer recipes, but it’s so amazing I make it all year round.
Firecracker Popsicles Red, White and Blue
What better way to cool off on a hot day than with healthy homemade popsicles?
Simple and refreshing, my Firecracker Popsicles Red, White and Blue are made with four natural ingredients: coconut milk, strawberries, blueberries and honey.
To make a low-carb pop, use Swerve instead of honey.
However, because Swerve is a low-carb keto sweetener, it’s not for me – read “What is the Best Sweetener for the Keto Diet?” to find out why.
Barbecue Recipes
The season for outdoor gatherings and celebrations is upon us.
I hope one of my delicious and nutritious recipes will be used at your next BBQ along with a healthy side dish. Need more inspiration? Check out my Gluten Free BBQ Menu!
This no potato salad recipe is an old but great recipe from the archives, I first shared it back in 2009.
