Preheat the oven to 350°F (180°C). Attach the parchment and lightly oil the paper. Please put it aside.
In the food processor, add four ingredients and blend until smooth, avoiding seeing cottage cheese. I turn off the food processor several times, rub the sides of the bowl with a rubber spatula and mix again until smooth and thick.
Pour the batter into the prepared bread – it is very sticky and it is normal. Oil the back of the tablespoon and press the dough flat. Sprinkle some chocolate chips on top if necessary.
Bake brownies at 350°F (180°C) for 18-20 minutes, set the top and dry.
Chill in the bread for 10 minutes, then cool in a cooling rack for 1 hour before sliced into six squares.
Note 2: Or almond butter or sunflower seed butter for nut-free options.
Note 3: Or agave with syrup or coconut nectar
Storage: Store brownies in the fridge in an airtight container for up to 4 days. Brownies can get troublesome in the fridge.

Ingredients and alternatives
To make these brownies, you only need four base ingredients. Here’s how to choose these:

Cottage cheese – This provides the main source of protein and contributes to the fud texture of brownies. You can use either full fat or low fat cottage cheese. Peanut Butter – This adds healthy fats, protein and a rich, nutty flavor. Almond butter or sunflower seed butter is a great alternative if you want a nut-free option. Unsweetened Cocoa Powder – This offers the classic chocolate flavor you’ll expect from a brownie. Maple syrup – This acts as a natural sweetener and adds moisture. You can also use agave syrup or coconut nectar as an alternative. For lower sugar options, sugar-free maple syrup also works.

Carine baking tips
Let me share some tips for the perfect brownie.
Extra Chocolate – Sprinkle some chocolate chips on top of the batter and then bake for an even richer chocolate flavour. Cool for a clean slice – Make sure the brownies are completely cooled before slicing. This helps them to harden and prevent them from breaking too much. Lower Calories Options – If you are considering reducing your calorie count, feel free to use low-fat cottage cheese. Low Sugar Choice – Choose sugar-free maple syrup to make these brownies low-sugar and low-carb snacks. A smooth batter is important. Blend the cottage cheese thoroughly into your food processor and absolutely blend it together until there are no lumps. Otherwise, the brownies have a slightly strange and lumpy texture. Flavor Enhanced – Stir in 1 teaspoon vanilla extract and a small salt into the final batter to enhance the overall flavor profile. Arrange the bread well – The batter is sticky, so line the parchment paper in the loaf pan and lightly oil it to prevent the brownies from sticking out and making them easier to remove. Press the batter evenly – Using the back of an oiled spoon or spatula, evenly press the sticky dough into the prepared pan, evenly and evenly, for an evenly baking.
