Instant pot variations
Sauté oil, onions, garlic, and carrots in sauté mode. Add broth, kale, rosemary, salt, and pepper. Seal and cook on manual/high for 5 minutes. quick release. Add zoodles and chicken, stir and let stand 5 minutes before serving.
Slow cooker variations
Add all ingredients except zucchini noodles to slow cooker. Cook on low for 5-6 hours or on high for 2-3 hours. Add zoodles during the last 10 to 15 minutes of cooking time.

Heat the oil in a large Dutch oven over medium heat.
Add onions, garlic, and carrots. Fry until soft but not brown.
Pour the soup, add the kale and rosemary and bring to a boil.
Reduce heat to low and add zucchini noodles, salt and pepper.
Cook for 5 minutes, then stir in the chicken (and lemon juice, if using).
Remove the rosemary sprigs, ladle into a bowl and serve warm. Top with Parmesan cheese if desired.
Makes about 12 cups in total.
