Microwave Keto Bread is a low-carb bread recipe that cooks in the microwave for just 90 seconds to instantly solve your bread cravings. A low-carb keto bread recipe perfect for making easy breakfast sandwiches or toast.

In a small mixing bowl, combine almond flour, coconut flour, and baking powder. Let’s set it aside.

In a separate bowl, mix the eggs with the olive oil and water.

Add the liquid ingredients to the dry ingredients and whisk until a smooth liquid batter forms.

Spray a tall 12-ounce coffee mug or microwave-safe pot with oil. I used a 6 inch x 6 inch square ceramic pan.

Pour the batter into a coffee mug or spread it evenly in the pan.

Heat the microwave on high (900W) for 90 seconds until the bread is heated through. If your microwave is on a low or high power setting, read about recommended baking times in my post above.

Carefully remove from the microwave as it will be hot. Next, use a sharp knife to loosen the sides of the bread and turn the plate or cutting board over.

If you bake it in a mug, it will be cylindrical, so slice it into two thick slices; if you bake it in a square pan, cut it in half to make two triangles.

Toast each slice of bread in the toaster until crispy, or make a sandwich, spread butter on the outside of the bread, and toast in a sandwich press or skillet until crispy.

Don’t have a microwave? Bake the bread in a ceramic baking dish at 180 °C (350 °F) for 8 to 15 minutes. Stop baking when a toothpick inserted into the center of the bread comes out clean.
Storage: If using the microwave, wrap the bread in plastic wrap to keep it soft and moist and store in the refrigerator for up to 24 hours. To enjoy the flavor and texture of the bread, we recommend making it just before eating.

Almond flour or almond meal – Both options are very effective. However, using almond meal will make the bread darker in color and a little grainier in texture. Coconut Flour – The combination of both flours creates the best bread texture, similar to wheat-based breads, with no carbohydrates. If you don’t have coconut flour, you can substitute almond flour, but the crumb will have a softer, cake-like texture. Eggs – This recipe requires eggs. If your microwave operates in the following environments:

900W – Heat the bread in the microwave for 90 seconds. 600W – Heat the bread in the microwave for 90 seconds, adding an additional 10 seconds if the center of the bread is still moist or moist. 1200W – Microwave the bread for 60 seconds, check the consistency and add another 10 seconds if it is still moist or wet in the center. Not sure how powerful your microwave is? Be safe and heat the bread in the microwave for at least 60 seconds of baking time. Then check the texture and microwave for 10 seconds until the center is set without becoming wet or liquid.

Remember, it’s always better to toast bread made in the microwave on low heat. In fact, you can always pop it back in the microwave in 10 second increments. However, if it is overcooked, it will become dry and difficult to eat.

The bread was baked so it was very soft. So you have two options for giving texture to your bread.

Toast in a bread toaster until crispy. Make the sandwich, toast it in a sandwich press, and slather the outside slice of bread with butter. Fry in a frying pan with butter. Make keto french toast sticks.
