I love to me a simple weekday dun with a flashy flavour, but I cook as few dishes as possible. This air fryer shrimp and vegetable recipe is just that! Stir-fried shrimp and vegetables at the same time, and then tossed it all in a super flavorful homemade stir-fried dish.
I love serving these long fusilli col buco noodles, a magnet of a charming little sauce to ours, but this dish is also served with ramen noodles.
This recipe is most efficient with a large air fryer. Because you’re cooking 1 pound of shrimp and buncha vegetables, a 10 or 12 quart air fryer means you can fry everything in one batch. If you are using a 6-quart air fryer or less, you should have fryed shrimp and vegetables in 2-3 batches.
Conclusion? In this recipe, the small air fryer is still 100% a-okay, but it takes time to cook everything, so keep that in mind 😋
The best shrimp to use in this recipe are large or jumbo shrimp. If the shrimp can be peeled and peeled, it takes preparatory work from the equation, so that’s even better. You prefer to turn the tail on or off.

Let your shrimp and vegetables cool completely. Next, transfer to an airtight container and refrigerate for up to 3 days.
Prepare the sauce. Add soy sauce, sriracha, honey, rice vinegar, sesame oil, and ginger to a bowl and whisk. Hoisin will be added later.
Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Place one cup of pasta water before straining.
Add pasta water to the sauce and whisk. The water from the past is still hot, but whisk with cornstarch. Please put it aside.
Add the peppers, broccoli, asparagus, white onions, garlic and shrimp to the air fryer basket. Toss the vegetables with sesame oil, salt, ginger and tomato paste. Vegetables and shrimp are fryed at 400ºF for 12 minutes and the basket is shaken midway. Depending on the air fryer, you may need to cook shrimp and vegetables in batches.
Once the vegetables are cooked, add the pasta to the air fryer. Pour the sauce over the pasta and toss all the ingredients together.

Feel free to mix the vegetables you will use. 6 QT was used. I had to cook the shrimp and vegetables in an air fryer and two batches. If you’re using a large air fryer, one batch will work. I used sesame oil, but avocado oil can also be used.
