These bad boys are low carbs, but still very pleased and bring a great bounce of protein to the table. Plus, they can be whipped surprisingly easily, so whether you’re fresh to keto or you’re here for a delicious treat, you’ll want to stick around.

3-ingRedient Cottage Cheese Bagel

The cottage cheese trend is hot everywhere right now, and for good reason, everyone is looking to increase their protein intake.

Most of the three iconic cottage cheese bagels we saw on the internet usually contain dry ingredients such as self-environment flour, all-purpose flour, and even gluten-free flour, but certainly using three simple ingredients to make high protein bagels, none of them are keto bagels.

I saw one influencer in Tiktok.

My goal with this keto bagel recipe was to put a lot of protein in it and create a chewy bagel with consistency that suits the bagel shape I wanted.

I adapted by using 12 eggs from regular bagels of coconut flour and making 12 bagels with a considerable amount of excess protein from all eggs, but although the amount of fat is also moderate, I wanted to reduce the amount of eggs due to its fluffy texture and increase my protein intake even more.

It’s light, fluffy and versatile.
Unlike some dense keto bread alternatives, these bagels have a great texture. A small bite makes it fluffy right. Plus, you can enjoy them with delicious seasoning mixes and sweet toppings like keto cinnamon sugar, but still maintain your keto.

Simple ingredients and alternatives

Cottage cheese

This is the star of the show. Cottage cheese offers moisture, protein and a slight tang that really lifts bagels. If you want to mix it, ricotta can be a decent alternative, but expect slightly different textures, Greek yogurt, and plain.

Eggs and egg white

The eggs act as a binder, and the bagel rises slightly, giving its fantastic structure. If you are allergic to eggs or avoid flax or chia eggs, a flax or chia egg replacement will work, but the texture may vary a bit. It is not recommended to replace any of these materials.

Coconut flour

Coconut flour is very absorbent – 2 tablespoons are very helpful. If you want to replace it:

Almond Flour – Use 3x the amount (6 tablespoons/42g for this recipe). Lower absorbency = softer, slightly more crunchy bagels, and slightly more carbohydrates. Oat Fiber – Uses 1:1 swap (14G). Zero Net carbs keep carbs very low, but give them dry breadcrumbs. Add 1-2 tablespoons of additional cottage cheese for moisture. Ground Sunflower Seed Flour – Use three times the amount like almond flour. The flavor is mild. If you use baking soda (a harmless reaction), be careful of the greenish tint.

Whey Protein Powder Replacement

Best choice of similar textures and rises

Whey/Casein Blend – 1:1 Swap. Casein gives more structure and chewing and often produces a little bread-like crumb. Egg white protein powder – 1:1 swap. It gives very high protein, low fat/carbohydrates and a great lift, but may be a bit dry. Increase the cottage cheese to 1 cup to provide the necessary moisture. Beef protein isolates – 1:1 swap. Mild flavor if you like it. Panms, which are more dense than whey, still work well in high protein baking.

Flavor booster

Add garlic or onion powder
A pinch of garlic or onion powder mixed in the dough offers a subtle flavourful kick that makes these bagels taste even more like classic bakery items.

Mix the chopped jalapeño
For a little heat, throw finely chopped jalapeño into the mix. It’s a surprising punch that makes the bagel stand out.

Incorporate fresh herbs
Freshly chopped parsley, chives or dill folded into the dough, with parsley, chives or dill, bringing brightness and freshness you wouldn’t expect from a bagel.

Freezing and storing leftovers

At room temperature

Airtight container or wrapped for up to 1 day – then it can be overly wet due to dairy/eggs and put bacterial growth at risk.

In the fridge

Up to 5 days in an airtight container or zip top bag. Place a paper towel in the container to absorb excess moisture so that the top is no longer sticky.

In the freezer

Up to 3 months. Wrap each bagel individually in plastic wrap and place it in a safe bag in the freezer. Thaw at room temperature or freeze in a 300°F (150°C) oven/air fryer for 8-10 minutes.

Tip: These are often whey quarantined, so if you temporarily reheat them in an oven or toaster oven, they will become rubbery, as they are better than the microwave.

Can I use full fat and low fat cottage cheese?

Yes, you can use full fat cottage cheese. I chose to use my homemade 2% lactose-free cottage cheese recipe and have low fat and no lactose, but it’s more suitable for Midlife Macro Method™. You can also exchange it for fat-free cottage cheese, but it may change the texture.

Can I exchange Greek yogurt and cottage cheese?

Yes, I haven’t tested this myself, but I probably can swap out the cottage cheese to make Greek yogurt bagels.

Can I exchange coconut flour for almond flour?

It’s hard to say if you’ll get the best results with the same texture as replacing coconut flour with a few tablespoons of almond flour. 1/4 cup of coconut flour is equivalent to 1 cup of almond flour. If you are going to test, please come back and let us know in the comments below.

Can I form bagel dough with a thick rope and place it in a sheet pan with a parchment lined?

Whipped cottage cheese and all ingredients are added to the food processor as they are not sticky dough. The fabric will form but cannot be molded. It’s still easy to pour and requires a standard silicone size donut bread.

Preheat the oven to 350°F. Place the silicone standard donut bread in a baking pan.

Place all ingredients in a food processor or large bowl and blend using an electric mixer until smooth.

Sprinkle everything except the bagel seasonings into a donut mold. Pour the batter into the mold.

Bake for 20-25 minutes until golden brown touched thoroughly.

Let it cool for 5 minutes before removing. Slices and toast.

Store: Airtight container for up to 5 days. To wrap individually, it can be frozen for up to three months.

Bagels that change or replace ingredients may not increase or create a chewy texture.
