I’m really looking forward to sharing this grilled, boneless, skinless chicken thigh recipe with you. This chicken recipe is not only tasty, but also low-carb, gluten-free and dairy-free! That means everyone can enjoy it! Serve the grilled chicken thighs with the Zastikinoa salad for a healthy, well rounded meal!

These grilled boneless chicken thighs are very tasty. No one would speculate they are keto and low carb friendly! The recipe requires simple ingredients and is very tasty to prepare. The Asian-inspired flavor of this recipe does not have the usual high sugar content, as it replaces a packet of trivia instead. Leftovers of grilled chicken can be eaten on burritos, salads, or on rice.

Chicken: You can use chicken breast in this recipe, but I prefer it as the chicken and thighs are much more flavorful and tender. I actually used boneless, skinless chicken thighs, but you can also use bone chicken thighs or chicken drumsticks. That way you will need to adjust the cooking time. Citrus: Using lime in a marinade works very well with other ingredients. However, you can substitute orange or lemon juice if you like. Spices: This marinade flavor is inspired by Asia, but instead of brown sugar, turbiah is used to reduce sugar and calories. Oil: Sesame oil is used in marinade to match Asian flavours. I don’t recommend replacing another oil, but if you absolutely need it, you can use avocado oil or extra virgin olive oil. Garlic: If you don’t have garlic cloves, you can replace 1 teaspoon of garlic powder. Optional: Onion powder and paprika can also be added to the marinade.

How to make boneless chicken thighs without bone

Step 1: Thaw boneless, skinless thighs if necessary. Place the chicken in a large bowl. Whisk the marinade ingredients in a small bowl or measuring cup.

Step 2: Pour the chicken marinade over the chicken thighs and make sure all pieces are covered. Marinate in the fridge for at least 2 hours or overnight.

Pro Tip: Another option is to marinate the chicken in a plastic ziplock bag.

Pro Tip: You can trim extra fat from chicken thighs, but I want to keep it fat as the fat adds more flavor.

Step 3: BBQ chicken thighs exceed thighs over medium-high heat for about 5 minutes. Flip it over to the other side and brush with excess marinade before grilling for another 5 minutes or until the chicken’s internal temperature reaches 165°F at the thickest part.

🎛Oven instructions

Place the marinated chicken thighs in a single layer on a foil-lined pot or 9×13 casserole dish. Brush with a marinated chicken thigh and bake in a 425°F oven for 30 minutes or until cooked. Check the internal temperature of the thickest part with a meat thermometer and make sure it reaches 165°F.
