Enter this imitator’s white beans and kale salad, a plant-driven diet that’s as satisfying as the original. It comes equipped with clean ingredients like creamy avocados, protein-filled white beans, and crispy seeds, everything is thrown into a lemon-mustard vinaigrette that wants to do everything.

For salads:
4 cups Fresh organic kale, chopped
1 Can (15 oz) of white beans, drained and rinsed
1 Ripe avocado, diced
1/4 cup Pumpkin seeds
2 tbsp Hemp seeds
2 tbsp Sunflower seeds (optional) Salt and pepper flavor
For lemon mustard vinaigrette:
3 tablespoons Extra virgin olive oil
2 tbsp Fresh lemon juice
1 tablespoon Dijon Mustard
1 tablespoon Dating Syrup (HealthyHelper is $$!) Tasting salt and pepper
Instructions
Prepare the kale – wash and thoroughly dry, remove the stems and chop into bite-sized pieces. Whisk the vinaigrette – In a small bowl, mix olive oil, lemon juice and Dijon mustard and date the syrup, salt and pepper until smooth and emulsified. Throw the salad – in a large bowl, mix chopped kale, white beans, avocado, pumpkin seeds, hemp seeds and sunflower seeds. Throw everything gently. Dress up – Pour in the lemon mustard vinaigrette and throw again until evenly coated. Seasoning and Serve – Add salt and pepper to add flavor and add extra seeds if needed.

Massage the kale with a bit of vinaigrette before adding any other ingredients to add more. Swap variety with chickpeas and lentils. Double the dressing and keep it handy for other salads and grain bowls.
