This cottage cheese mousse is a 3-symbol chocolate mousse that is high in protein, gluten-free, low in sugar and easy. If you want to increase protein, but have sweet teeth, it’s the perfect 5 minute healthy dessert.

In a food processor or high speed blender, add three ingredients and blend at high speed until smooth and no cottage cheese curds.

You will need to stop the blender/food processor several times, rub the sides of the bowl with a silicon hepatula and repeat until proper texture is achieved. If it’s too thick to your liking, you can blend it into 1 tablespoon of almond milk.

If the taste is too bitter, adjust it by adding maple syrup. To add flavor, add 1/2 tsp vanilla extract or pinch of salt, then blend again and incorporate.

Serve with whipped cream, strawberries, or yogurt.

Note 1: You can use low-fat cottage cheese, but the mousse won’t be too thick. It will be something like a pudding.
Note 2: You can also use cocoa powder or calob powder. Carob doesn’t bring the same chocolate flavor, but it’s a great cocoa free option.
Note 3: You can use honey or sugar-free maple syrup to cut sugar and calories. I use sugar-free maple syrup on my nutritional panel.
Storage: Store mousse in an airtight container in the fridge for up to 3 days.

Cottage Cheese – This forms a creamy base of mousse and is packed with protein. Using full-fat cottage cheese will give you a thicker concentration, but low-fat will look like pudding. You can also use full-fat Greek yogurt as an alternative to different textures. Unsweetened cocoa powder – This provides a rich chocolate flavour. Cocoa powder or carob powder can also be used, but Carob brings a rather intense and chocolatey taste. Maple Syrup – This adds a sweetness to the mousse. You can also use honey or sugar-free maple syrup to reduce sugar and calorie content.

This recipe is very simple. Here’s what each step looks like:

Pour all ingredients into a blender or food processor.

Process at high speed, rub off the sides to make sure everything is well mixed.

Let me share some more tips for the best desserts.

Espresso Kick – Try blending in with a tablespoon of cold brewed espresso for a chocolate flavor enhanced with coffee tips. Flavor Enhanced – A pinch of salt can balance the sweetness and bring out the chocolate flavor, while a teaspoon of vanilla extract adds a nice air freshener. Lower Calories Options – Using low-fat cottage cheese is an easy way to reduce the overall calorie content of your mousse. The blend is important. Blend the ingredients thoroughly until the mixture is completely smooth and there are chunks of cottage cheese left. You may need to stop and scrape the sides of your blender or food processor a few times. Adjust consistency – If the mousse is too thick, blend it with a tablespoon of almond milk to reach the desired consistency. Sweetness Control – Taste mousse before serving, add maple syrup to adjust the sweetness to your liking.
