I adapted this cinnamon raisin easy bagel recipe, the latest version of Keto Cottage Cheese Bagel, which has the texture of a regular bagel and has taken the internet by storm!

Full fat cottage cheese or low fat?
What really makes them unique is the use of cottage cheese, and it’s a creamy twist to keep them keto-friendly.
You can use full fat cottage cheese, but I’m working on a keto recipe with medium fat for the middle-aged macro method, so I chose 2% low fat cottage cheese, but I can’t even notice the difference.
If you have lactose intolerance, use the homemade 2% lactose-free cottage cheese recipe. Good Culture Brand and Green Valley Lactose Free Cottage Cheese are great brands.

Can I exchange cottage cheese?
If you don’t have cottage cheese on hand, you can exchange it for ricotta, but it will increase calories, carbohydrates and fats significantly.
For best results, we do not recommend swapping cottage cheese with cream cheese. This is because it’s not fluffy bagels, but rather heavy and rich.
You can exchange it for Greek Greek yogurt to make Greek yogurt bagels. Nutritional information is pretty close to what I’ve listed below on a printable recipe card.
Can I form bagel dough with a thick rope and place it in a sheet pan with a parchment lined?
Whipped cottage cheese and all ingredients are added to the food processor as they are not sticky dough. Dough fragments form a shape, but they are not moldable, are still easy to pour, and require a standard silicon sized donut bread.

Preheat the oven to 350°F. Place the silicone standard donut bread in a baking pan.
If used, place all ingredients except raisins using an electric mixer in a food processor or large bowl and blend until smooth.
If used, divide the raisins into four equal stakes and sprinkle them onto each donut mold. Pour batter into each cavity of the mold.
Bake for 22-25 minutes until golden brown and thoroughly touched.
Let it cool for 5 minutes before removing. Slices and toast.
Store: Up to 5 days in a fridge airtight container. To wrap individually, it can be frozen for up to three months.
