These easy Keto Banana Cream Pie Parfaits are a great, low-carb snack for the whole family. Only 6 g of net carbohydrates per parfait!

Homemade Keto Banana Cream Pudding

Creamy homemade no-sag sugar plus banana flavored pudding is layered during keto cookie crumbles using my grain-free, sugar-free vanilla wafer, perfect travel size mason jar for a simple grab n-go snack for kids!

I first wrote this recipe and we were on the go most of the week when my kids were involved in hundreds of millions of activities. Snacks could have been help or disability. Too many snacks destroy even adults’ plans for dinner.

My philosophy is that I eat completely sugar-free protein low carbs, but I didn’t need the low carb diet that would allow my kids to get to normal weight, so I wouldn’t let my kids eat this way.

That being said, I limit their snacks to low sugar low carb options and/or only natural sugars. And most of the time, they don’t like to offer artificial sweeteners wearing sugar-free wrapped puddings.

This means that most packaged types of snacks are full of sugar and artificial colours and flavors, so you need to always make your own snacks using nutritious whole foods.

But I don’t want to be a slave in the kitchen all day. I need something useful and this recipe is a mark for that!

Is it a banana keto?

No, bananas are not keto-friendly fruits because they are high in carbohydrates. However, this pudding does not contain bananas and imitates it with just the flavor extract.

My kids have been asking me for banana cream pie for a while.

I rarely make pie except for special occasions like this lemon cream pie, but this is what I live in as a healthy dessert option for snacks is something I need around here and also a sugar detox coach!

If you’re running and grabbing these to ride in the car to soccer games, dance classes, music lessons, you don’t need sugar-free whipped cream!

Cover each jar in the fridge and attach the spoon to the side of the jar with an elastic band.

I did not include banana slices between the banana purine layers in our nutritional information for those of us who eat low carbs and keto.

The pudding has plenty of banana flavor, and the vanilla whale crumble is perfect between the layers.

In a medium saucepan, mix whole milk and heavy cream.

Remove 1 cup and place in a small bowl. Please put it aside.

Bring the whole milk and cream at a medium low heat.

While it is cooked, add egg yolk, guar gum, sweeteners and salt to a large mixing bowl. Mix well.

Pour the egg yolk mixture into a large pot of milk and cream, increase to medium heat and bring to a boil, then simmer for 5 minutes.

Always whisk and pour in vanilla extract, vanilla stevia and banana extract. Continue whisking the pudding consistency for about 5 minutes until the mixture is thick.

Remove from the heat and pour into a bowl and cover plastic wrap or parchment paper directly onto the surface of the pudding to prevent skin from forming. Cool to room temperature.

assemble:

Sprinkle sugar-free cookies on the bottom of each mason jar.

1/4 cup pudding spoon on crumble.

If you are using fresh bananas, layer three slices of banana on top of the pudding.

Sprinkle more cookies to crumble.

It is also finished with 1/4 cup pudding.

Top where sugar-free whipped cream and more cookies will crumble if necessary.
