Easy Mediterranean Roasted Cauliflower Salad
I’m a full-blooded Italian, but I crave the taste of the Mediterranean like no other. Not surprising since they are quite similar.
I never grew up eating black olives, always the green ones with pimento, kalamata, and Greek salad flavors. We always had red onions, fresh tomatoes, and of course fresh parsley in our house and meals at least a few times a week.
Everything, and I mean almost everything, was drizzled with olive oil. My mom didn’t cook much with butter, but every lazy Sunday night like clockwork, she would make me and my three siblings the best grilled cheese sandwiches in the country.

I’m currently on a low carb diet and love using raw cauliflower in unique ways, so I made this salad. Most cauliflower salad recipes are like potato salad, but this recipe has a European twist.

A typical Friday night fish dinner always included a squeeze of lemon. As a child, I never understood why my father liked adding lemon so much.
But growing up, I realized what a huge difference lemon makes in my favorite recipes, especially keto salads.
I also didn’t grow up eating feta cheese, but this Mediterranean cauliflower salad is definitely delicious when mixed with fresh roasted vegetables. Obviously, if you are dairy-free, you can omit the feta cheese.

Keto potluck and BBQ
This lovely dish of oven-roasted cauliflower is full of flavor and perfect on its own. It’s the perfect healthy side dish to take to a potluck or serve at a summer BBQ party.
If you make the lemon dressing with fresh herbs in advance, it will be even more flavorful the next day. If you don’t like cauliflower, you can substitute roasted broccoli, green beans, red peppers, or Brussels sprouts.

Of course, if you don’t like red onions, you can omit them. If you prefer different olives or other vegetables, feel free to adjust to what you think your family will enjoy.
Roasting all the vegetables in high-quality extra-virgin olive oil and seasonings makes this low-carb recipe incredibly flavorful.
Roasting and enjoying all kinds of vegetables is one of my family’s most favorite ways to enjoy them. You may be tempted to skip the roasting step, but trust me on this one. Roasted and cooked cauliflower is much better than raw, so there’s no need to skip roasting.
Once again, don’t skip the most important step of this salad. Large florets should be roasted.
The flavor of roasted cauliflower is beyond amazing, and it tastes much better than adding it raw to this salad. In the meantime, you can divide this into two portions and freeze them for easier meal planning in advance.

Can I use cauliflower rice instead?
If you don’t want to roast the cauliflower florets in this cauliflower salad recipe, you can use cauliflower rice. We recommend using a food processor to grate fresh cauliflower.
I think fresh is best, as frozen cauliflower rice has a high water content and tends to dilute the flavor of the dressing.
I don’t like lemon, what else should I use?
If you don’t like lemon dressing, you can replace it with an equal amount of red wine vinegar.
Let’s make this the main course
A great option to increase the protein in this vegetarian salad is to add cooked grilled chicken or grilled steak chips. Alternatively, canned tuna or salmon can be effective as a complete meal.

Preheat oven to 425 degrees Fahrenheit.
Place the cauliflower florets on a baking sheet.
Add 3 tablespoons of oil and mix well.
Bake for 45 minutes. Set aside to cool.
In a large bowl, add the cooled cauliflower, tomatoes, onions, olives, feta, and basil.
Combine the dressing ingredients in a separate bowl.
Pour the dressing over the cauliflower salad and mix well.
Serve immediately or refrigerate in an airtight container until ready to serve, for up to 3-4 days.
