In a large bowl, combine oat flour, cocoa powder, chocolate thin mint whey protein, baking powder, and salt. Mix wet ingredients together. In a separate bowl, mix applesauce, coconut sugar, eggs, melted coconut oil, vanilla extract, and peppermint extract until smooth. Blend together: Gradually add the wet ingredients to the dry ingredients and stir until well combined. If using, fold in dark chocolate chips. Bake: Pour the batter into the prepared pan and spread it out evenly. Bake for 18-20 minutes or until a toothpick inserted into the center comes out slightly fluffy.
