Inside: Get a fun and easy recipe for Funfetti protein pancakes. Protein powder, cottage cheese, or bananas do not use 10 grams of protein per serving.
Like my protein pancake idea, but don’t you like the flavor of cottage cheese? i got you! These pancakes use Greek yogurt instead. The protein isn’t that expensive, but it still packs a significant amount. As always, it does not contain protein powder (or bananas).


Necessary materials
Oats: Either traditional or quick work. That doesn’t matter because you fuse them. Vanilla Greek Yogurt: Thicker than regular yogurt and more protein. Egg Baking Powder Almond Extract: Optional but adds a great flavour. Sprinkles: Types of rainbows!


How to make them
Add all the ingredients and blend until smooth, except sprinkle on a blender or food processor. Sprinkle and stir. While preheating the griddle, let the batter sit and thicken it. Pour the batter into a griddle of your favorite pancake size. I use the quarter cup measuring cup and get about 2 pancakes for each. Turn the bottoms upside down and cook until both sides are brown.

How much protein do these pancakes contain?
I get about 25 small pancakes from this batter and there are 5 pancakes per serving. This results in about 10 grams of protein per serving. It’s not as expensive as my cottage cheese pancakes, but when paired with a cup of dairy or soy milk, it gives you a total of 18 grams of protein in your diet. It’s not tattered!
Can I add protein powder?
of course. Replace 1/4 cup protein powder with 1/4 cup of oats. Note that if the protein powder becomes sweeter, the pancakes will be very sweet. You can adjust it using plain yogurt or half vanilla yogurt and half plain.
Can you make these sweeter (or less)?
yes. To avoid sweetening them, use half Greek yogurt and half vanilla Greek yogurt. To make them sweeter, add 1 or 2 tablespoons of honey or maple syrup.
Are these gluten free?
Yes, the oats you use are labeled “gluten-free” and check the label with sprinkles (mostly gluten-free, but make sure you check the ingredient list).

Instructions
Mix oats, Greek yogurt, eggs, baking powder and almond extract in a blender and blend until smooth. Sit the batter with a sprinkle to make it thicker. I use the quarter cup measuring cup and get about 2 pancakes per measuring cup. Once it foams and turns brown on top, continue cooking on both sides until brown. Remove from the griddle and serve and leave remaining pancakes within 5-7 days.
