I wanted something that was fresh, flavorful and satisfying, not complicated. This bowl is served on juicy Greek chicken, creamy hummus, crispy cucumbers, juicy tomatoes, red onions and a simple drizzle of Greek dressing, all over warm rice. Comfortable Mediterranean food, easy on weekdays, but tasty enough for preparing a weekday meal.

Get quick preparation using chicken bids – chicken bids can be easily cut into cubes and ready to cook. When the time is short, it is perfect for weekday meals. Use a hot frying pan – To get the best sheer with golden crust for your chicken, preheat the frying pan 4-5 minutes before adding chicken. Once the chicken is in a single layer of pot, do not touch it for 5 minutes. This ensures a good sear for chicken. Choose the hummus you love – the hummus adds creaminess and extra flavor to the bowl. I like to switch between classic roasted red pepper or calamata olive hummus, depending on what I have on hand. Double the chicken – Greek chicken is very versatile. Make extras and throw them into wraps, salads, or pasta throughout the week. Cook chicken in batches for the best texture. Add protein – Add Greek yogurt azaleas, add chickpeas, or use quinoa instead of rice to add protein to your diet.

If you’re on time and solid, here are some easy ways to save time and enjoy a delicious, nutritious bowl.

Use quick cook or frozen rice – microwave jasmine rice, frozen brown rice, or even pre-cooked pre-cooked rice, all are great shortcuts. Chop vegetables in advance – Cucumbers, tomatoes and onions are all pre-chopped and can be stored in airtight containers in the fridge. This makes bowl assembly easier during the week. Use the shortcuts you purchased in the store. If you’re running out on time, warm up with rotisserie chicken or a Greek dressing in a pan to add flavor.

Can I make this low carb?

yes. You can add Greek chicken or a large bed of greens instead of rice on top of cauliflower rice. It’s still very flavorful and stuffed.

What other proteins can I use?

How much dressing should I use?

We recommend starting with 1/2 tbsp per bowl. If your hummus is already full of flavour, you may not need more. Taste and adjust it according to your preference.

Can I double the recipe?

Yes, but you’d want to cook chicken in batches. Overcrowding the pan will cause the chicken to steam and turn off the texture.

What is the best way to store leftovers?

Store rice, chicken and vegetables in separate containers in the fridge. When ready to eat, reheat the chicken and rice, then add the hummus, vegetables and fresh clothing.

Start the rice in the instant pot – rinse it well, drain it, and add it to the instant pot. Cover with 1.5 cups of water, high pressure for 3 minutes

Prepare the chicken while the rice is cooking. Preheat a large frying pan over medium heat. Cut the chicken into cubes and add 2 tablespoons of dressing and 1/2 teaspoon salt. Mix well.

When the pot is hot, add the chicken and move the chicken into a single layer before touching it for 5 minutes. This helps to form the crust. After 5 minutes, run the chicken and cook for another 3-4 minutes until the chicken is cooked.

While the chicken is cooking/rest, slice cucumbers, chop up tomatoes and slice onions.

Once the rice is cooked, it can be manually released or released naturally for a few minutes. Fluff the rice with a fork.

Add rice, chicken, vegetables, 2 tablespoons of hummus and 1 tablespoon of Greek dressing to each bowl.

Tip:

For the fastest preparation, using chicken bids is the easiest to cut into cubes. I like Primal Kitchen Foods Greek Dressing, but please use my favorite. If you don’t have an instant pot, use a Quick Cooking microwave or frozen rice instead. Add more flavor with olives, pickled red onions, or azalea sauce. If you want to double the recipe, cook the chicken in batches.

Storage of leftovers:
Store chicken, rice and vegetables in airtight containers in the fridge for up to 3 days.
When you’re ready to enjoy, reheat the chicken and rice before assembling the bowl.
