Sometimes you just need a lunch to check every box. Quick, fresh, stuffed and tasty. This Greek tuna salad has been repeated in my kitchen recently! I was eating straight out of the bowl while standing at the counter (guilty!). However, it is ideal to scoop it into flatbread or pita crackers.
It’s creamy thanks to a small Mayo + Greek yogurt combo, fresh lemon juice and zippy skin, packed with Mediterranean flavour. Daily kalamata olives, salty feta, crispy peppers, fresh parsley. Think of tuna salad, but it’s getting expensive! I’ve always liked the vegetable and fish salad being chunky and crispy, so it’s an all-in-one meal.

How to make this Greek tuna salad

Ingredients (1-2 provided)
1 can of tuna, 1 tablespoon drained mayonnaise 2 tablespoons Greek yogurt juice and half a large lemon ½ pepper rind, diced ¼ cup pits kalamata olives ¼ cup fresh parsley, chopped crushed feta cheese

Instructions
Step 1 – Drain the tuna and flakes
Drain the tuna well and place in a mixing bowl.

Step 2 – Add a binder
Stir in the mayo, yogurt, lemon zest and lemon juice. Season and season with salt and pepper.






Step 3 – Add remaining ingredients
Fold the peppers, olives, parsley and feta until everything is combined.




Step 4 – Serve
Grab a fork and eat it as is, or stack it on a sandwich or scoop it up with a pita chip. I love it on mixed greens for a light lunch!
