Maven’s simple tips

Use fresh or dried spices. It uses a mix of fresh and dried spices. For the ultimate flavor, if you can find it, I recommend using fresh turmeric!

Let’s marinate. I highly recommend marinating this chicken to maximize the flavor! You can marinate overnight if necessary.

Add heat. Although not required, I love adding a little sambal olek for a small kick. Red chili flakes also work.

Grill inside or outside. It’s still too cold to use an indoor grill pan to grill outdoors. We also include instructions for simple grilled turmeric chicken.

Create a simple swap. Do you like chicken breast? no problem! Can’t find fresh turmeric? No Biggies – Please dry! There are plenty of simple customizations to this recipe.

Turmeric chicken ingredients

Boneless and skinless chicken thighs – You can also use chicken breasts or bone skin skin thighs. Ginger – I like to use fresh ginger. Because it brings more heat than drying. Ground Turmeric – I use dried ground turmeric because it’s easy to find, but if I can get some fresh turmeric it would be a great replacement! Other spices – Garlic powder, Paprika, Cumin, Coriander, Salt + Pepper Lemon – Uses both one lemon zest and juice. Honey – Sweetness helps balance the flavors and also brings a nice caramelization to the chicken.

How to make grilled turmeric chicken

Step 1: Marinated chicken

In a large bowl, mix the chicken and thighs with all the other ingredients, stir and coat. Cover and leave in the fridge for at least 4 hours or overnight.

Step 2: Grill the turmeric chicken

Preheat grill pan on the grill or stove top to medium heat (approximately 450ºF). Remove the chicken from the marinade and add it directly to a grill rack or bread. Grill on each side for 5-7 minutes or until the internal temperature reaches 165ºF.

Can I make this with a stove top?

yes. Feel free to cook this on the stove using regular bread or grill pans. I really love this cast iron grill pan.

Can I bake this chicken in the oven?

yes! Pour the chicken and marinade into a shallow baking dish and bake at 400°F for 30-35 minutes or until the internal temperature reaches 165ºF.

Can I use fresh turmeric?

absolutely! Feel free to eat fresh turmeric instead of dried ground turmeric. Note that you want to double the amount (1 tablespoon, not 1.5 teaspoon).

Can I use chicken breast? How about the thighs of the bone skin?

yes. Instead of chicken thighs, you can sneak into chicken breast. You can also use the thighs of the bone skin. Please note that cooking times vary. Chicken is done when the internal temperature reaches F 165 degrees. It is recommended to use an instant reading thermometer to know when the chicken is ready.

Do I need to marinate the chicken?

Note that although not necessarily, the flavor may not be that strong.

Storage Instructions

Store remaining cooked turmeric chicken in a fridge airtight container for up to 3 days. Reheat in a microwave or stove top.

If you want to store raw chicken in a marinade, you can store the chicken in the fridge and keep it in an airtight container or Ziploc bag for up to 24 hours.

Freeze: In the freezer, you can store raw turmeric chicken in a marinade in a Ziploc bag for up to 3 months. Thaw in the fridge overnight and cook as directed.
