Happy Birthday Mom - From the big boy pantry

As my brother and dad mentioned in their post, to celebrate my mother’s birthday yesterday, I wanted to share some of her recipe favorites.

I thoroughly enjoyed eating her food as a child, but I don’t know if I realized how lucky I am to eat such high quality nutritious foods until I get older.

Still, I loved cooking with her as much as I enjoyed eating and enjoying her food. Some of my most childhood memories include creating these recipes and more.

After I leave, I always look forward to visiting the house and taking on various time-consuming projects in the kitchen with her. To this day, cooking and baking have been a source of constant joy for me and I am very grateful that my mother has inspired me to do these passions.

I hope you enjoy these recipes just as much as I do!

Chicken Palm

A classic and true classic of dinner at home throughout my childhood. This is always served with a cheesy goodness, rich protein served with chicken and delicious sauce. Her favorite dinner.

Double Chocolate Cherry Cookies

My favourite desert. My mother makes these and visits every time I get home. The rich chocolate and cherry flavors are the perfect combo.

Pro Tip: Soak the cherry in Grand Manier overnight, then create a more flavorful taste for the cookies.

Charset

Thanks to this shasset, I was looking forward to Passover every year. Once I moved out of the house, my mom would send it to me, so I was able to still have some. They didn’t last long as the jars could be considered a regular serving for me.

Apple sauce

My mother has always instilled us the value of simple fresh dishes. This dish is easy to get, but it’s blown away that the store bought apple sauce from the water. I can feel excited as a child when the smell of cooking apples wafts through the house.

Cranberries and kale

I love eating kale. Raw, sauteed, baked goods – I enjoy all forms. This dish is a memory of my early kale. This simple and delicious dish kicked out lifelong love.

lemonade

This was a summer staple in our home, but it was also an early lesson in entrepreneurship. Every summer, my mother would take us to the store and source a lot of lemon and ice. I mixed this batch of lemonade and hit the street corner with a sign. “Lemonade, 25 cents!” We’d scream when we tried to sell snacks or chocolate chip cookies to our neighbors.

Raw fudge

This recipe is something I haven’t been in a while, but the post embodies everything that made my mother so great. I’m trying to teach my kids how to cook and coach baseball. She was always on the mission of spreading joy and finding ways to participate in our lives.

Pear Craftis

This was one of the first deserts I remember eating. It was one of her favorites, so we made it and enjoyed it over the years. And yes, the rumors are true. I loved screaming “Crafutis” over and over again as a kid (and maybe I do).

Happy birthday mom! I wish I could cook some of my favourites in the kitchen, but I find comfort in celebrating the joys that I and many others have brought through food.
