Cottage cheese bread

If you’re a TikTok user, you’ve probably seen cottage cheese bread made with just two ingredients: whipped egg whites and cottage cheese, rather than whole eggs. However, other cottage cheese bread recipes call for bread flour or all-purpose flour, and are neither keto-friendly nor gluten-free.

The ingredients are simple, but it’s completely flavorless (water, cottage cheese, and liquid egg whites) so don’t try it.

Be sure to check the ingredients on TikTok, as there are a lot of content creators out there who have zero interest in using quality ingredients for their keto meals, so make sure they’re made without regular refined flour or sugar.

I too have tried the popular cottage cheese flatbread recipe but it crumbles every time, never looks like the TikTok versions, and never folds up like a sandwich wrap.

I’ve tried adding xanthan gum and gelatin but it still cracks, so while this may be the easiest keto bread recipe, I don’t recommend it if it doesn’t work for you.

Can I change the cottage cheese?

Yes, you can swap them out, but remember that your macros will change. This cottage cheese bread has 9 grams of protein and 1 gram of carbs per slice.

You can also substitute ricotta cheese or Greek yogurt for the cottage cheese, but this will still increase the carb count listed in the nutrition information in the printable recipe card below.

We don’t recommend using other cheeses, especially mozzarella, because unlike Fathead dough, it also doesn’t contain keto flours like almond flour or coconut flour.

Which type of cottage cheese is best?

My favorite brand is Green Valley Organic, but the Lactaid brand is great as is, and if you don’t need lactose free I also recommend the Good Culture brand and Daisy Cottage Cheese brand.

I don’t recommend fat-free cottage cheese because it’s not as satisfying or creamy as full-fat cottage cheese, and both my daughter and I are lactose intolerant, so I like to use lactose-free cottage cheese.

Full fat cottage cheese is best, and using 4% or 2% cottage cheese will give you the best results.

Can I replace allulose?

If you can’t buy allulose in your area, you can make bread without it or you can make allulose syrup at home using my recipe.

Can I substitute whey protein powder?

I don’t recommend that.

Whey protein powder acts like gluten when baking gluten-free alternatives, not only giving them a fluffy texture but also adding height, rise and chew to bread.

If you don’t want to use whey protein powder but still want to use egg white protein powder, try this cottage cheese bread recipe.

Can I use egg white protein powder instead?

If you don’t want to buy it, you can replace it, but it helps keep the bread from deflated. If you do remove it, increase the whey protein powder to 1 cup.

How to Store Keto Garlic Bread

Once the bread is completely toasted and cooled, cut it into 12 slices.

The best way to store them is to store them in an airtight container in the fridge for up to 1 week, or place slices between parchment paper and store in an airtight container in the freezer for up to 2 months.

Take a slice or two out of the freezer and toast them.

Instructions

Preheat oven to 300 degrees F.

In a stand mixer or electric hand mixer, beat the egg whites and vinegar until stiff peaks form. This will take about 10-15 minutes. Set aside.

Place the egg yolks in a bowl and whisk together the remaining ingredients except the parsley and garlic until combined. You can also combine the ingredients in a blender and blend until smooth.

Gradually add a small amount of the egg yolk cottage cheese mixture to the egg white mixture, mixing until just combined.

Turn the mixer to low speed and add the chopped parsley and garlic.

Pour batter into a 9×5 loaf pan lined with parchment paper and grease with olive oil cooking spray.
Bake on the middle shelf of the oven for 50 minutes or until a toothpick or skewer inserted into the centre comes out clean and is golden brown. Turn off the oven but leave it in the oven for another 10 minutes without opening the door.

Serve warm with a drizzle of melted butter or dip into a mixture of olive oil, minced garlic and Parmesan cheese.
