How to make

Preheat oven to 400°F (200°C) and grease a 12-cup muffin tin. Combine cooked quinoa, raw organic whey protein, milk, cheese, vegetables, Yo Mama’s Pizza Sauce, eggs, and seasonings in a large bowl. Scoop mixture evenly into muffin cups and press gently. Optionally, top each bite with a spoonful of Yo Mama’s Pizza Sauce and a sprinkle of mozzarella cheese. Bake for 22 to 25 minutes, until golden brown and set. Allow to cool before removing. Store in the refrigerator for up to 5 days or freeze for an easy-to-go snack.

1/2 cup Raw Organic Whey Protein (Save with code HEALTHYHELPER!)
2 cups cooked quinoa
1/2 cup Milk of your choice (regular or unsweetened almond milk)
1 cup Shredded low-fat or fat-free mozzarella cheese
1 cup Chopped peppers and onions (optional)
1/4 cup grated parmesan cheese
2 Lightly beat a large egg
1 tablespoon italian seasoning
1 teaspoon onion powder
1 teaspoon Garlic powder Salt and pepper, to taste Yo Mama’s Pizza Sauce, for topping, about 1/2 cup total (use code HEALTHYHELPER to save!) Additional shredded mozzarella, for topping (optional, about 1/4 cup)

Instructions

Preheat oven to 400°F (200°C) and lightly coat a 12-cup muffin tin with nonstick spray. In a large bowl, combine cooked quinoa, raw organic whey protein, milk, mozzarella cheese, Parmesan cheese, peppers and onions (if using), eggs, and all seasonings. Mix until well combined. Divide mixture evenly between muffin cups and press gently to compact. Bake for 22-25 minutes or until golden brown and firm to the touch. Remove the muffin tin from the oven and pour about 2 teaspoons of Yo Mama’s Pizza Sauce into each bite. Sprinkle some mozzarella cheese on top. Return the muffin tin to the oven and bake for an additional 3 to 5 minutes. Or switch to the grill and broil until the cheese on top is melted and bubbly, 1 to 2 minutes. Let cool for 10 minutes, then remove from the pan and serve hot.
