Whole Foods actually sells a brand of chicken chips called Wild, which are delicious. My youngest child loves them. The only problem is that they are so delicious, he wants to eat the whole bag.
This wouldn’t be a problem if it weren’t for the tapioca flour, which has about 10 grams of carbohydrates per serving, and other ingredients like maltodextrin, which can spike your blood sugar.
It’s two servings, so if you eat the whole bag it’s 20 carbs – not bad for my 13 year old son, but not good for me as I’m on a keto diet.
I’ve also seen a brand called Flock Chicken Skin Chips at Whole Foods, and both are sold on Amazon, but they’re expensive and contain inflammatory soybean oil.

Where can I buy just the chicken skin?
If I eat the skin, I make sure to only buy organic premium chicken. When I want a tasty snack that’s keto friendly, without the mystery ingredients of store-bought keto snacks, I want just simple, clean ingredients.
I buy my organic chicken online through Wild Pastures or my local Whole Foods.
I also asked Whole Foods if they had processed boneless, skinless chicken with just the skin, and they gave it to me. It wasn’t free, but it was nice to not have to remove the skin from the chicken myself.
I’ve also found organic chicken breasts and thighs at my local grocery store, but they often won’t keep the skin even if I ask, especially if they sell skinless chicken.
Crispy Chicken Skin Chips
Crispy Chicken Skins give you that really crunchy chip like regular potato chips that you’ve always wanted in a low carb chip.
It’s super satisfying and super easy to make – all you need is some chicken skin, sea salt, black pepper, and your oven or air fryer.
Lay it flat, cut it if it’s too big (but remember it will shrink, of course), and leave it in the oven.
No need for messy frying, they cook to perfection right in the oven.
There’s something about chicken skin that just makes me feel happy! It’s so tasty and delicious, but for someone like me who grew up in the fat-free era, chicken skin was a no-no.
Since starting a low carb and keto diet, I’ve finally realised that it’s not the fat that’s the problem, it’s the carbs. Fat doesn’t make us fat!
It’s not good when combined with carbs, but eating fat without carbs is great.
Chicken skin chips are a treat to me, just like bacon. I don’t eat either of them every day, but I do enjoy them every now and then.

Can I use rotisserie chicken skin?
You could probably remove the skin from a rotisserie chicken, but I haven’t tried it myself, and since it’s already cooked, I don’t think it needs to be cooked as long as raw chicken skin.
Also, since rotisserie chicken is already seasoned, I recommend not adding salt or pepper.
Storage Method
It’s best to eat leftover chicken chips the same day you cook them, as they may become rubbery the next day. If you have any leftovers, store them in an airtight container on the counter for up to 2 days.

Keto Crispy Chicken Skin Chips (Oven or Air Fryer)
These Chicken Snack Skins are a crunchy snack that’s even tastier than potato chips, making them the ultimate guilt-free snack.

Preheat oven to 375 degrees F. Line 2 baking sheet pans with parchment paper.
Lay the chicken skin evenly in a single layer in the skillet. If necessary, use a sharp knife to cut any larger pieces in half. Season both sides with a little salt and pepper.
Place another sheet of parchment paper on top of the crusts on both baking sheets.
Place another baking sheet on top of the baking sheet to weigh it down and prevent the crust from curling.
Bake for 20 minutes, then rotate the pan. Continue baking for 40 to 45 minutes, or until golden and crisp. Transfer the skins to paper towels to remove excess fat. Serve immediately.
Air Fryer
You can line the bottom of your air fryer or rimmed baking sheet with foil or parchment paper before placing the raw chicken skins on the air fryer basket or stainless steel wire rack. Once cooked, carefully lift off and discard the foil or parchment paper.
Place 3 to 4 chicken pieces, skin side down, in a single layer in the air fryer basket and program the air fryer to cook at 400°F for 12 minutes.
Halfway through (6 minutes), flip the chicken over so that it’s skin side up.
Air fry for the remaining 6 minutes or until the chicken skin is crispy. If the skin is still a little soft, add an extra minute or 2 to the cooking time.
Remove the chicken from the air fryer and place on a wire rack to cool.
Discard any remaining chicken fat from the bottom of the air fryer before repeating the process with the remaining chicken skin.
