Utilizing seasonal fruits like fresh strawberries is why today’s recipe shakes your sugar-free ice cream world!
The biggest part about this simple homemade keto ice cream is that you need eggs and egg yolks to achieve a creamy texture.
Sweet strawberry puree swirling through a cheesecake-flavored ice cream mixture will make your tongue a happy dance!
You don’t need to show this swirl, but it’s worth a little effort to make it happen.
If you decide to blend the strawberry mixture into the cheesecake ice cream base of your ice cream machine, I won’t judge you! It’ll turn pink!


How to make keto strawberry ice cream
Simple ingredients you need (see the printable recipe card at the bottom of the post for accurate measurements)
Strawberry swirl
Fresh strawberries
Fresh lemon juice
Monk Fruit Allloin (I used sweets)
Sea salt
Berry Liquid Stevia
Vanilla extract
Ice cream base
Cream cheese softens
Half and half
Heavy cream
Monk Fruit Allure Candy
Liquid allulose helps keep your ice cream soft
Berry Liquid Stevia
Optional: 1 tablespoon vodka or MCT oil to help with texture
Strawberry topping
Place the first six ingredients in a high-power blender or food processor and blend until smooth. Please put it aside.
Homemade ice cream
Place the soft cream cheese and half in a stand mixer and mix high until smooth or use a large bowl and a hand electric mixer.
Add the remaining ingredients and melt high until incorporated. Taste and adjust the sweetener if necessary.
Pour the cream cheese mixture into the ice cream machine and follow the manufacturer’s instructions. The mine was an attachment to KitchenAid and it took about 20 minutes to get the soft serve texture.
Set the strawberry swirl mixture aside and stir by hand or stir. Please reserve for toppings.
Place the ice cream in 9 x 5 bread bread, drizzle puree strawberries on top and freeze for 2-3 hours. If you have reserved some of the puree strawberries, refrigerate until ready to serve on ice cream.

If you want this to be a dairy-free recipe without heavy cream ice cream, you certainly can!
Replace the heavy whipped cream with half and half used in canned coconut milk or coconut cream instead. Replace the cream cheese with vegan cream cheese.

Should I use berry liquid stevia?
No, if you don’t have berry stevia, you don’t need to use berry-flavored stevia, but it enhances the best flavor of sweet strawberries. Add more of your favorite sweeteners to taste.
Do you need liquid allelose?
Yes for best results, I would not recommend making this without liquid allureose, but if you can’t find it where you live, try using granulated allureose.
