Low Carb Cheesecake Plush Baked Apple
Especially the ripe apples in autumn are a delicious snack! But when you take that perfectly baked apple and use it as a shell of a caramel-flavored cheesecake, my friend is the icing on the cake.
It’s not as good as creamy cheesecakes made without added sugar or all the natural sweetness from the apples is soaked.
Just thinking about these bites makes me drool! A great way to keep your sweet teeth under control for special occasions in autumn.
The biggest part of this easy dessert recipe is that if you do the hard work of scooping out the inside of the apple, the rest is pretty easy. The mixer does the work and hears OOHS and AAAHS from your family, bake, bake, bake, chill and enjoy!
This recipe gives you memories of the fall season enjoying caramel apples on a stick. But the difference is that the apples are hollowed out and covered with sweet, sticky caramel toffee, but filled with a luscious creamy cheesecake filling!
My kids and friends who came ate these with their fingers! No fork needed, and they also ate all the apples!


Apple Carbohydrates
A 149 grams of small apple has around 77 calories and 20 grams of total carbohydrates. Some people who follow the keto diet only allow 20 grams of carbohydrates all day, eating one small apple can be useless and can be kicked out of ketosis.
Using small amounts of high carb fruits like Apple in many serving recipes is something you can enjoy, whether you are following a keto diet or a low carb diet.
In this stuffed animal, we remove the inside and leave about a thin amount of about 1/4 inch from the skin. Therefore, this low-carb recipe can be enjoyed by many people on a low-carb or keto diet.


Which type of apple should I use?
When I first created this stuffed animal recipe, I used a Macintosh apple. The kids liked the soft look, but I found them to be a bit mushy. When I saw this second time, I tried the red tasty apples and the harder apples appealed more than the kids.
I think even the Granny Smith apple is a great option. Fresh apples that you personally enjoy during the Apple season work here.


Low Carb Sweetener Swap
If you don’t have cinnamon stava, add 1/2 of cinnamon and liquid monkfruit sweetener.


Sugar Free Maple Syrup Options
When I first wrote this recipe in 2015, I found a Serkin Gold Fiber Syrup that didn’t have as many low-carb syrup options and offered a caramel flavour. However, since then, I have been updating this recipe with lots of sugar-free syrup to use, and now I have updated it with an allulose maple flavored syrup.
If you can’t buy it where you live, you may want to add a teaspoon of maple extract. You can also try Lacanto Sugar Free Maple Syrup.

Cut off the top of the apples and discard the center of each apple with a melon baller, 1/4 inch from the edge. Place the apples in an oiled baking dish or baking pan.
Preheat the oven to 350 degrees.
Add cream cheese to a stand mixer and mix until smooth.
Remove the optional toppings, add the remaining ingredients and mix until well mixed. Taste and adjust the sweetener if necessary.
Let it cool and then refrigerate for at least 3 hours or overnight.
Enjoy the drizzle caramel sauce (this is my homemade keto recipe).
Storage: Place remaining stuffed cheesecake apples in a fridge airtight container for up to 5 days.
