These amazing keto low carb apple cream cheese muffins are heaven for breakfast! Gluten-free, almond flour-free, grain-free, low-carbs, no added sugar! These keto muffins use real apple and cream cheese stuffing, but they’re still only 3g of net carbs! Enjoy a low-carb diet and keto diet!

Summer is over and if you’re a mom’s school it’s starting again for your family. Breakfast options are required for busy work or school mornings. To cook breakfast first, we recommend making something smooth and less stressful a week in advance.

These amazing muffins are family favorites at my home when it’s apple season, and even friends and family who don’t have low carbs or sugar will devour this lovely breakfast treat!

Is apples keto?

Technically there is no keto. Ketosis is a metabolic state in which your body is in when eating a very low carbohydrate diet.

The total number of carbohydrates you need to eat makes a difference in ketosis in order to burn your body fat due to fat loss. The amount of carbohydrates varies from person to person.

A 149 grams of small apple has around 77 calories and 20 grams of total carbohydrates. Some people who follow the keto diet only allow 20 grams of carbohydrates all day, eating one small apple can be useless and can be kicked out of ketosis.

Using small amounts of high carb fruits like Apple in many serving recipes is something you can enjoy, whether you are following a keto diet or a low carb diet.

When September begins, some people are most likely ready for all the pumpkin pie spices, but they enjoy creating special healthy recipes using beautiful, luscious apples in the fall.

Now, there’s no doubt that you’ll simply infiltrate the apples here and make these with mashpon pumpkins, but if you have a tradition of going to apple picking in the fall, these delicious muffins make a great recipe to use them.

Apple Pie Spice

Heavy cream

Apple, finely chopped (if you want to lower the total carbs even further, replace it with a chopped Apple Zucchini, but definitely add the Apple Pie Extract listed as an option below)

Soft cream cheese

egg yolk

Vanilla extract

Vanilla Stevia

Optional: Apple Pie Liquid Extract offers more Apple flavors

Instructions

Preheat the oven to 375°F.

Place the wet ingredients (butter, sour cream, vanilla extract) in a stand mixer and mix until smooth.

Whisk the following seven dry ingredients together before adding to the mixer. Blend low until incorporated.

Add one egg at a time to the mixer until well absorbed.

Pour heavy cream until absorbed.

Stir in the apple.

Set aside the muffin batter while you’re making the stuffing.

Clean the blender and add cream cheese, egg yolk, vanilla and stevia. Mix high until smooth. Please put it aside.

Use a cupcake liner or parchment paper liner or grease 12 capacity muffin pans. Fill each cup halfway through with a batter.

I evenly scooped cream cheese over the muffin top. Finish with the remaining batter on top of each muffin cream cheese.

Add some chopped apples to the top of each muffin if necessary. Sprinkle some golden monk fruits on top if necessary.

Bake for 25 minutes or until toothpicks are clean. It’s great when cooled or room temperature. Refrigerate before breakfast.

Store in a fridge airtight container for up to a week or in a safe container in the freezer.

Coconut powder muffins

I adopt the original recipe from this Apple Muffin recipe and make these low carb, gluten-free, tree nut-free keto apple pie muffins, because my youngest has a nut allergy to the tree.

My go-to keto flour is coconut flour.

I’ve noticed that some tree nut allergies are allergic to coconuts, but whether the FDA says it or not, coconuts want to set a straight record. In reality, it is considered a fruit with pits like peaches.

Obviously, if you or someone you love has a coconut allergy, don’t use this recipe. But for my son, he could enjoy what I made with coconut products and these muffins were a hit for the whole family!

Small sweet chunks of apples, creamy sweet cream cheese, you may not be able to have just one!

Scoop cream cheese evenly over each muffin. Finish with the remaining batter on top of each muffin cream cheese.

If necessary, place some apple fragments on top. Sprinkle some brown sugar subs over the top if necessary.

Bake for 25 minutes or until toothpicks are clean. It’s great when cooled or room temperature. Refrigerate before breakfast.
