This is the perfect treat with your morning coffee and may seem time-consuming, but it’s a really simple recipe that even a beginner keto baker can make.
The first layer is a wet keto coffee cake with vanilla hints.
The next layer is cream cheese stuffing spread over the batter, topped with fresh mixed berries.
If necessary, you can turn this into a keto blueberry cream cheese cheese coffee cake by removing fresh blackberries and fresh raspberries.
Above the berry cheesecake layer is a delicious crumble topping.

Cake Ingredients
Room temperature eggs, butter, Greek yogurt, (sour cream can also be exchanged), unsweetened almond milk (can exchanged with coconut milk for nuts), vanilla extract, low carb sweetener, almond flour (can exchanged with sunflower seed flour for nuts), coconut flour, baking powder
Cream Cheese Center Ingredients
Cream cheese, mixed fresh berries, low carb sweeteners are optional, lemon rind


Streusel topping ingredients
Exchange with almond flour or sunflower seed flour for nuts, butter, low carb granules or powdered sweeteners and cinnamon


How to make a soft cake
Preheat the oven to a 350 f/180 C/160 fan and line the bottom of an 8-inch (20cm) round springform pan with parchment. Spread butter on the sides and parchment paper.
Add the eggs to a large bowl and whisk in an electric mixer for 1.5 minutes until light and fluffy.
Add melted butter, yogurt, almond milk and vanilla extract and swab. Beat until combined.
Mix almond flour, coconut flour and baking powder in clean separate bowls. Add the dry material to the wet material and blend until combined. Don’t beat too much.


How to make a cinnamon stroisel layer
Using a spoon, mix all the ingredients into another small bowl and press into the small chunks with your fingers.
How to assemble a keto cinnamon coffee cake recipe
Add the cake batter to the cake pan and flatten it with a spatula. Spread the cream cheese on top or leave it one inch away from the edges. Top with a single layer of berries and sprinkle them over a stroisel topping.
Bake for 60-70 minutes. Please check in 40 minutes. If the top of the cake starts to brown quickly, you can cover it loosely with a sheet of aluminum foil, but do not seal it.
Let the cake cool completely before releasing and removing the spring form.
Please note; The cake will feel very soft when it comes out of the oven, but will become hard as it cools, so don’t overcook it. For serving, look back at the sugar-free confectionery sugar on top if necessary.
