Quick Dessert is my favorite dessert. That’s why such baked truffles are such a lifesaver. They are impressive and the flavor is luxurious, but the actual preparation time is less than 10 minutes.

Here are what these Keto Snickerdoodles come into play:

Nut Butter – I used macadamia nut butter, but almond butter, sunflower butter, or another seed butter also works. Protein Powder – I prefer vanilla protein powder because of its sweetness and structure, but high-grade almond and coconut flours can also be substituted. If you’re skipping protein powder, add a little extra vanilla extract. Low Carb Sweeteners – My favorite is the monkfruit allulose brown sugar alternative, but the low carb sweeteners work. Flavor Booster – Maple extract, vanilla extract and cinnamon liquid stevia give these truffles a nostalgic snickerdoodle flavour. Cinnamon Sugar Mixed – Classic Snickerdoodles always come with a cozy cinnamon sugar coating. Here we recreate it by mixing cinnamon and keto-friendly sweeteners. Chocolate Chips – I use sugar-free chocolate chips for the coating. Dark or white chocolate also works. Melt them in a microwave safe glass bowl or double boiler.

Optional mix-in: Sprinkle protein powder over a spoonful of coconut oil for a smooth chocolate coating or a thick shell coating.

Mix in a large bowl or stand mixer or food processor in the base, then mix in nut butter, protein powder (or almond flour), monk fruit sweetener, cinnamon stevia, maple extract, and pinch of salt. Mix until smooth and dough-like.

Shape into truffles and separate the dough using a cookie scoop or a small spoon. Roll the hassle until you form about 12 small truffles in total. Place them on a baking sheet or cookie sheet lined with parchment paper.

Melt the chocolate in the microwave in a safe bowl or double boiler, melt the sugar-free chocolate chips in 1 teaspoon of coconut oil and stir until smooth.

Each truffle is dipped into melted chocolate and coated completely with the help of a fork. Tap to remove any excess chocolate and return it to parchment.

Set and store in the fridge until the coating is hard. Store in an airtight container at room temperature or refrigerate for refrigeration.

I recommend the flavored cinnamon stevia here. You actually add a traditional snickerdoodle flavour, but if you don’t have it, use vanilla stevia and add 1/4 teaspoon of cinnamon.
