Maybe it’s because Valentine’s Day is in my heart. Or maybe I was craving something sweet, but these bars of chocolate almond butter came to me in a literal dream. Yes, I was dreaming of these bars! The next morning I had to check my fridge to see if it was really a dream (sadly so).

Then I tried to recreate these delicious bars.

I love the challenge of a good recipe that I long for something, but I have to get what I already have. I also think I’ll create the best recipes as they require flashy ingredients and leg work. So if you’re looking for Valentine’s Day or really anytime sweet treats, these bars will definitely fit your bill!

Simple ingredients. To make these bars you only need seven simple ingredients you may already have in your pantry!

No baking is required. Yes, no oven or baking required! Easy to mix and freeze for a simple no-bake Valentine’s Day snack!

Gluten-free + vegan. These bars are a perfect hit regardless of the crowd, but if you’re looking for a gluten-free, vegan, healthy no-bake Valentine’s dessert, I have the cover of you!

It’s easy to prepare meals. These bars hold great storage in the fridge or freezer, so you can store them for fun on another day.

Chocolate almond butter bar ingredients

This chocolate almond butter bar recipe comes in two layers: an almond butter base and a chocolate topping. This is what you need:

For almond base layer:

Almond Butter – Ideally use natural almond butter rather than almond butter spreads that contain other ingredients. Maple syrup – honey or agave also works. Add more or less based on your flavor preferences. Oat Flour – You can grind your own round oats into a blender or buy store-bought oat flour. Ground flax – this not only helps to bond this layer, but it is also a great source of fiber!

For chocolate layers:

Chocolate Chips – Approximately 4 ounces of chocolate. You can also use chopped chocolate bars. Coconut Oil – Melt coconut oil in chocolate can help you create a chocolate magic shell. Sea Salt – I like to use the sea salt with Maldon Flakes, but I’ll use or skip what you have!

How to make a No-Bake Chocolate Almond Butter Bar

Step 1: Create a base layer

In a large mixing bowl, combine all the almond layer ingredients and stir until well mixed. Spread the almond layer evenly in a parchment-lined baking pan and place in the freezer while making the chocolate layer. I use your fingertips and it’s perfect for spreading this layer.

Step 2: Make chocolate toppings

Melt the microwave chocolate chips and coconut oil in a microwave safe bowl in 30 seconds increments. Remove the bar from the freezer and spread the chocolate layer evenly over the top. If you are using it, sprinkle with flake-like sea salt.

Step 3: Freeze

Place in the freezer until set for 30-60 minutes. Remove the bar from the freezer, lift the parchment, and remove the bar from the baking pan. Slice into 12 bars (3×4).

Simple swaps and replacements

Use a different nut butter – prefer another nut or seed butter? Feel free to exchange almond butter with peanut butter, cashew butter, hazelnut butter, sunflower butter, or other nut butter.

Make it old – replace the oat flour with almond flour. I think the texture is a little soft, but it still works and tastes better.

Replace sweeteners – If necessary, you can replace maple syrup with honey or agave.

FAQ

How do I eat these bars?

I like them being chilled out of the fridge and usually eat them with my hands or forks. If you are storing it in the freezer, it is best to sit for 10 minutes to make it easier to eat.

Are these bars healthy?

I think they certainly are! They have less sugar than most desserts and are sweetened with 3 tablespoons of maple syrup. The base is also a mixture of almond butter, oat flour and flax, making it rich in protein and fiber.

Can I use a different size of bread?

When using a chocolate magic shell, it’s like a par for the course. Don’t stress about that – they still taste delicious!

Storage Instructions

Refrigerator: Store the bar in a fridge airtight container for up to 2 weeks.

Freezer: Store chocolate almond butter bars in airtight containers in the freezer for up to 3 months. Remove 10 minutes before eating and soften or store in the fridge for a few hours.

Arrange 8 x 8 baking dishes with parchment. In a large mixing bowl, combine all the almond layer ingredients and stir until well mixed.
