One of the easiest ways to make your meal fresh and interesting is to change it to the seasons. If you’re not sure where to start, my book Eat Beautiful is the perfect place to get inspiration. Not as an alternative to regular meat sausages or burgers, but as a star of the show! We offer this delicious spicy fish recipe with plenty of lime. It is rich in skin-enhancing vitamin C, and has metabolic and antibiotic properties, so it helps to reduce acne. Other skin-friendly ingredients include cucumbers and parsley, and the recipe works with all kinds of fish, but we recommend sea bass and red snappers.

My Summer Spicy Fish Recipe
Serve 2
265 calories per meal
1 fish (such as a red snapper or sea bass), gut and cleaning
1 fresh red chili pepper, finely chopped in a baby
1 tablespoon honey
Garlic cloves, finely chopped
A handful of finely chopped fresh coriander
1 shallots, finely chopped
1 Lime juice
Sea salt
For salad
A handful of rockets
One cucumber, chopped
1 lemon juice
Preheat the oven to a 180°C/160°C fan. Score the fish’s skin diagonally and diagonally, and rub sea salt onto the skin with a sharp knife. Mix the chili peppers, honey, garlic, shallots, coriander and lime juice in a small bowl and rub this mixture inside and outside on the fish. Place the fish in the middle of a large foil. Fold the foil over the fish as if wrapping around the floor, and crumpling the open edges at each end to create a boat-shaped parcel. Place the foil-wrapped fish on a baking tray and cook in the oven for 20 minutes or until tender. Meanwhile, place the rocket, cucumber and lemon juice in a bowl. To serve, cut the top layer of cooked fish and transfer it to a plate, carefully pull the fish bones and head apart, then transfer the rest of the filleted fish to a second plate. Serve with salad.
