Options for extra sweetness

In a coffee mug, use a fork to whisk the eggs and yogurt.

Whisk the cocoa powder and sweetener until the dough is consistently smooth.

Stir in half the chocolate chips if necessary.

Microwave at high (800W) for 90 seconds or until top dry. Check the microwave power supply. If you are higher (1000W), you may need to microwave the mug cake for just 60-70 seconds to get the same texture.

Sprinkle the remaining chocolate chips over the hot mug cake and let it cool in a mug for 60 seconds.

Note 1: I use full fat plain Greek yogurt, but low fat yogurt works as well.
Note 2: You can also use sugar, brown sugar or erythritol.
Storage: You must eat immediately. The mug cake is not stored well and changes the chewiness and gummy. But all you can do is prepare the dry ingredients for the mug in advance.

Carine’s tips

Let me share some tips for the perfect mug cake:

Boost Chocolate Flavors – For an even richer flavor, stir some extra chocolate chips directly into the batter. Enhanced with salt – A small pinch of salt sprinkled on top can really bring out the strength of the chocolate. Protein Power-Up – Provides mug cakes to add Greek yogurt to add protein. Mix the dried ingredients first – for very quick treatment, combine cocoa powder and allulose in a mug in advance. Next, whisk the eggs and yogurt when ready. The timing of the microwave is important. Be careful of microwave mug curl cakes as cooking times may vary depending on the microwave wattage. The top looks almost dry, but still looks a little soft.
