Preheat the oven to 350 F and prepare the baking sheet with parchment. Grind the chips into small/fine pieces and place in a shallow bowl. In another shallow bowl, whisk the eggs and buffalo sauce together. In a third shallow bowl, add the flour. Cut the onion into ½ inch rings. Coat each ring into flour, wash the eggs, then apply the crushed chips at the end. Bake the ring for 7-10 minutes and bake the golden brown. Add ranch dressing if necessary.
