2 bags Quest Cheese Crackers 1 cup Almond flour 4 cup Cotilla cheese ½ TBSP Baking Powder ⅛ TSP 1 ½ cup Salt 1 1 tablespoon Shretch Mozzarella cheese 1 tablespoon Cream cheese 1 egg 16 cocktail sausage
method
Preheat oven 350 F and prepare the baking sheet with parchment. Place the crackers in a food processor and blend until they are finely crumbled foam. Transfer to a large mixing bowl with almond flour, cotilla cheese, baking powder and salt and mix. In another bowl, melt the mozzarella and cream cheese in the microwave for 30-40 seconds and stir until smooth. Stir in the eggs. Add the wet ingredients to dry and use a rubber spatula to mix until the dough is combined. Divide the dough into 16 uniformly sized pieces. Roll each piece into a ball and then flatten it. Wrap each piece in a cocktail sausage. Bake the golden brown for 12-14 minutes. Serve with your favorite dipping sauce.
