Preheat the oven to 350 F and prepare the baking sheet with parchment. Place the eggs in a shallow bowl and place crushed chips and gluten-free flour in your own shallow bowl. Peel the onion and trim about ½ inch from top. Turn the onion upside down and start about ½ from the roots, make 8-well cuts and onions, then cut between each to create “petals.” Carefully turn the onion over and separate the layers. Place the onion in a bowl of flour and cover with flour. Next, add the onion to the egg bowl and use a brush to coat the onion evenly, reach between all layers. Carefully transfer the onion, crush the chip bowl, and spoon the chips onto the onion. Return to the egg bowl and repeat again. Transfer the onion to a baking sheet and bake for 15-20 minutes. Serve with your favorite dipping sauce.
