If there’s one salad on the internet that just screams summer, that’s it! My summer salad served with roasted honey pistachios is packed with bright, fresh greens, sweet sliced strawberries and homemade honey roasted pistachios.
Throw in a homemade lemon honey mustard vinaigrette (naturally gluten-free!) and enjoy it all season with a potluck, backyard barbecue, or a simple summer dinner.
Outstanding recipe features
Homemade honey roasted pistachios are made quickly and simply with stovetop with just two ingredients.
I always thought that asparagus had to be roasted to taste and roasted and tasted, but if you’ve never sliced fresh asparagus for a salad, now is the time! A crisp, fresh and tasty way to add vegetables to any salad.
The homemade honey mustard vinaigrette is bright and bright, adding the perfect amount of flavor without overwhelming the fresh ingredients in the salad. Don’t skip unless absolutely necessary
Some important ingredients
Spring Mix: I love the colour and soft texture that the spring mix bed adds to this salad. Feel free to contact us with chopped romaine, butter lettuce, arugula and spinach if necessary. Pistachio: Do not repeat, do not skip the roasted honey pistachio. They can be made with Stove tops very easily and add such a great texture and flavor to this salad. Strawberries: Do you have a summer salad without sliced strawberries? I don’t vote. Not only do they add some great colour to this salad, but the sweet flavor is iconic and completely summery Y. Blueberries are also a fun addition if you’re about tossing a second fruit. Honey: My girl! Honey is used to sweeten roasted pistachios as well as homemade honey mustard salad dressing.

How to roast pistachios completely
All these roasted pistachios require are shelled pistachios, honey and a little flake salt. And this method is very simple:
Heat a small frying pan over medium heat. Add the pistachios to the pan toast for 1 minute. Add honey to the pistachios and toss. Cheers until the pistachios begin to turn golden (this will only take a few minutes). Top with flake salt and let the pistachios cool. Enjoy the test 😋

What to serve with this refreshing salad
When it’s time to serve this salad, pour the dressing over it and throw it. Serve with honey pistachios and feta cheese and enjoy immediately.
If you’re serving this salad as a side dish, combine this salad with one of the summer salad recipes like this lemon pasta salad with fresh herbs, grilled zucchini or grilled corn, and croissants with chicken salad sammy. Ah, and sliced watermelon or my simple fruit salad! This English peas and potato salad is also delicate. It’s like a farmers market at your next summer backyard barbecue.

This summer salad is best served immediately, but if you are preparing it later, we recommend waiting for the addition of the pistachios, feta and dressing until ready. As the olive oil separates from the remaining ingredients, the salad dressing should be whipped and shimmered.
This is also a great salad to use the good old bottle salad make-up method. Pour the dressing into the bottom of the jar, then top with hearty vegetables (red onion and asparagus), pistachios, feta, strawberries and lettuce and close the jar. When ready to eat, shake the jar or pour it into a bowl and throw it.

Details of my favorite summer salad recipes
Add spring mix, fresh strawberries, asparagus and onions to a large salad bowl and toss them. Please put it aside.
Heat a small frying pan over medium heat. Add the pistachios to the pan toast for 1 minute, then add honey to the pistachios and toss. Cheers until the pistachios begin to turn golden.
Remove the pistachios from the heat and transfer to the plate. Top with flake salt and let the pistachios cool.
Meanwhile, prepare the dressing. Add all ingredients to the bowl and whisk together until combined.
Pour the dressing into the salad and toss. Top with honey pistachio and feta cheese salad. Enjoy immediately.
If you don’t serve salads right away, we recommend waiting for the dressing to be added. Cracked goat cheese, shredded Parmesan cheese, or pearl mozzarella can also serve as an alternative to feta.
