Simple Mediterranean corn salad

It’s sweet corn season here in the Midwest. So it’s time to turn your corn recipe into Allllll. First! Featuring sweet and juicy caramelized corn, crispy cucumbers, juicy tomatoes, crushed feta and fresh herbs, this Mediterranean corn salad is all thrown into a simple homemade vinaigrette. This Mediterranean corn salad was born out of my love for this extremely popular Mediterranean grilled street corn recipe created by Linley a few years ago. It’s all the flavors you love from that recipe, but you’ll be tossed together in a delicious salad that’s literally perfect to serve at a summer gathering.

When the best way to use fresh sweet corn is in season

Important ingredients

Sweet Corn: It is highly recommended to cut out the cobs with fresh sweet corn (flavors and textures cannot be bumped into!), but you can use frozen corn if you are in a pinch. Before using, thaw the frozen corn to remove excess moisture from the corn. PS: Don’t sleep in my innocent tutorial for the perfectly boiling corn of cob 😋 Cucumber: The fresh and crisp crunch of sliced cucumbers is essential to the Mediterranean flavour of this salad. Various cucumbers work. Make sure to slice them into half a month. Feta Crumble: The salty, crunchy quality of feta is also important for the flavor of this salad. If everything is on hand you can use kotilla or crushed goat cheese. Kalamata Olive: I’m on Team Olive! I know that not everyone is, so if olives aren’t your jam, skip these. If you don’t use olives, you may need pinch or 2 salts as this adds such a great salty flavour to your salad.

Tips for storing leftovers

This Mediterranean corn salad should be stored in the fridge for up to 5 days if stored in an airtight container. Add a combination of crushed feta and fresh herbs and toss to lighten the salad a little before serving leftovers.

Details of my favorite salad

Heat avocado oil in a large frying pan over medium/high heat. Add corn and season with 1/4 teaspoon salt. Fry the corn for 6-9 minutes, stirring occasionally until the corn carmelizes and turns brown. Remove from the heat.

In a large salad bowl, combine cucumbers, red onions, tanned tomatoes, cherry tomatoes, feta, olive oil, red wine vinegar, lemon juice and remaining salt.

Once the corn has cooled, add it to a salad bowl and mix. Throw fresh herbs and serve or transfer to the fridge for cooling.

Corn: Fresh corn can also be used. We recommend following this tutorial on how to boil corn on a cob to remove and cook the corn. This recipe allows you to use all kinds of cucumbers. If you are using more varieties, make sure to slice them in half a month.
