If you’re not a fan of cottage cheese, you’ll love this lemon pudding. It does not contain dairy or cottage cheese.

Gelatin exchanges for vegans or vegetarians
If you’re plant-based or vegetarian and want to enjoy this pudding, you can replace 1 teaspoon gelatin with ½ teaspoon agar powder.
Manual:
Dissolve the agar agar powder in coconut milk before heating. The mixture is gently boiled and simmered for 2-3 minutes to fully activate. Let it cool a little and then blend the remaining ingredients.
Note: Agar sets tighter than gelatin, so if you prefer a softer, more custard-like texture, you can start with just under 1½ tsp and adjust it based on your next preference.


Can I exchange coconut milk?
If this recipe doesn’t need to be dairy free, you can swap coconut milk for heavy cream.
Can I use Xanthan gum instead of gelatin?
For this particular recipe, we do not recommend swapping gelatin for xanthan gum.
Can I exchange coconut milk for almond milk?
You can trade coconut milk for unsweetened almond milk, but I haven’t tested this, so you might need a little more gelatin as coconut milk has more fat and helps to solidify the pudding.


Can I replace lemon stevia?
If you’re not a fan of using stevia, you can exchange it for a sugar-free sweetener that you like. These liquid sweetener options are recommended such as allilose and liquid monkfruit sweeteners.
Granular low carb sweeteners are not recommended. Low carb sweeteners may work.
Should I use fresh lemon juice?
If you don’t have fresh lemons on hand, you can exchange them for a very small amount of lemon extract, but they are strong and powerful so they are easy.

Pour lemon juice into a small bowl and sprinkle gelatin over the juice to bloom. Please put it aside.
Place beaten eggs and egg whites in a large non-stick frying pan over medium high heat. Scramble until cooked.
Place the scrambled eggs and white in a high-speed blender or food processor.
Blooms coconut milk, low-carb sweeteners and gelatin. Blend at high speed until smooth. Taste and adjust the sweetener if necessary.
Optional toppings. 1 teaspoon of lemon zest and canned coconut cream, or fresh berries if needed.
Storage: Place in an airtight container until ready to serve for up to 3 days.
