Can I exchange sesame flour?

Sesame flour and almond flour don’t work exactly the same, but in most baking recipes you can replace it with a 1:1 ratio per volume.

Key differences: Sesame flour is more dense and absorbent than almond flour.

Here is a simple guideline:

½ cup sesame flour ≈ If 4 cup almond flour dough appears wet, reduce the liquid slightly. If it’s too dry, add 1-2 tablespoons of liquid or excess egg whites.

Can I exchange sweeteners?

You can exchange the sweeteners used with powdered erythritol, but they may have an aftertaste or cooling effect from that particular low-carb sweetener.

Why use two sweeteners in this recipe

Here you will notice that you are using both the touch of liquid stevia with allelose and cinnamon here and monk fruit. People often ask, “Why both? Isn’t it enough?”

Since 2011, after years of creating sugar-free recipes, I found that blending sweeteners gives the best overall flavor. Each one has its strengths, but it also has its own quirks.

Allulose’s monk fruit offers a beautiful sweetness, and aids in bulk and texture, especially in baked goods. Liquid Stevia (in this case, cinnamon flavor) adds a little extra sweetness and warmth without adding bulk.

Combine them and they balance each other. Stevia helps to enhance the flavor notes, while allulose rounds out the sharper edges. Together, they smooth out the aftertaste you might notice if you use only one by one.

This layering approach allows you to use sugar to taste the recipe as close as possible to the traditional sugar-added version.

Why this recipe uses both baking powder and baking soda

When it comes to an agent, I get asked, “Why do I need both?”

Here’s the scoop:

Baking powder is itself a perfect keeper and already has acid mixed in, so when combined with liquid, it reacts when heat is applied. It gives the donut a light and fluffy lift. Baking soda requires acid to activate. In this recipe, ingredients such as maple tea (slightly acidic) and sweeteners help to provide that balance. Baking soda not only helps with a big rise, but it can also improve browning and reduce the bitterness of flour.

Using both together will create the right fluffy texture and color. Baking powder ensures reliable lift and fine-tune the soda to fine-tune the rise, flavor and golden finish.

It’s a bit of a baking science trick to make these doughnuts soft and airy, not dense or flat.

Preheat the oven to 350°F.

Soak the tea bag in water for 5 minutes.

While the tea is soaking, whisk together coconut flour, sesame flour, sugar sub, cinnamon, baking powder, baking soda and salt in a large bowl.

Add eggs, oil, maple extract, liquid stevia to a stand mixer or to a large mixing bowl.

Squeeze out the tea bag and throw it away, then pour the tea into a blender or large mixing bowl with wet ingredients.

Blend high until combined or use an electric hand mixer, then add the dry material to the wet material and blend until incorporated.

Apply two glasses of donut bread with grease and spread the donut batter evenly across each cavity of the donut bread to make eight donuts.

Bake for 15-20 minutes until golden brown.

Let it cool a little, then remove from the bread and finish cooling on a wire rack.

Mix the optional glaze into a bowl and spread it over each donut if necessary.
