In a small bowl, mix the almond flour and protein powder. Mix the syrup and plant milk dates. Mix until soft cookie dough forms. If the dough is too dry, add another splash of milk. Fold the chocolate chips. Open the date vertically on each Medjool (but do not cut through it completely) and remove the pit. Fill each date with a cookie dough mixture using a small spoon or finger. Sprinkle the stuffed animal with chocolate chips and pinch of flake sea salt. For a harder chew, place the stuffed date in the fridge for 10-15 minutes.
