1 Pound Spaghetti (gluten-free if preferred)
1 Bottle (24 oz) Vegan Marinara Sauce (I use Yomama… Code Healthy Helper saves $$!)
1 Block (14 oz) firm tofu, drained and collapsed
1 cup Vegan cream cheese
1 cup Vegan Sour Cream
½ cup Nutritional yeast
2 Garlic, chopped
1 tablespoon olive oil
1 cup Shredded Vegan Mozzarella (for options, toppings or creaminess) Taste fresh basil to garnish with salt and pepper

Instructions

Cook the spaghetti according to the packaging instructions to Al dente. Drain and set aside. While the pasta is cooked, heat the olive oil in a large frying pan over medium heat. Add the garlic and saute for about 1-2 minutes until the aroma is good. Add the crushed tofu to the frying pan and cook for 5-7 minutes until lightly browned. Season with salt and pepper. Mix the marinara sauce and nutrient yeast. Simmer for about 5 minutes and combine the flavors. In another bowl, whisk the vegan cream cheese and sour cream until smooth. Lower the heat and stir the cream cheese mixture into the marinara tofu sauce. Mix until everything is creamy and well combined. If it is too thick, add pasta water and loosen it. Add the cooked spaghetti directly to the pan and throw everything together until the noodles are completely coated with its rich, velvety sauce. (Optional) Stir in fine vegan mozzarella cheese to make extra creaminess or sprinkle the plating once on top. Garnish with fresh basil and heat it.
