Virus Jennifer Aniston Grain Salad Ingredients

1 cup of brown rice 1 can (15 oz) of cooked quinoa chickpeas, drained and rinsed, ½ small red onion, finely chopped fresh parsley, chopped fresh mint, chopped, chopped, chopped pistachios, chopped, chopped, chopped.

For dressing:

3 ½ lemon 1 tablespoon salt 1 tablespoon salt 3 tablespoons extra virgin olive oil juice ¼ black pepper

How to make it

In a large bowl, mix quinoa, brown rice, chickpeas, red onion, parsley and mint. In a small bowl, whisk together olive oil, lemon juice, salt and black pepper. Pour the dressing over the salad and toss until well mixed. Sprinkle the roasted pistachios on top before serving.
