For those on a low-carb diet, I adapted the recipe a bit to use real bananas and no extract. Total and net carbs increase, but no sweetener is needed.

If you are on a keto diet, always check out the ingredients on tiktok. Make it without regular refined flour or sugar. There are many creators who use cottage cheese in high-protein recipes, but in most cases this is not the case. Perfect for low-carb or keto diet lifestyles.

It all started when I made a cloud bread loaf with cottage cheese. And I was hooked.

Instructions

How to use a microwave oven

Coat 2 ramekins, or microwave-safe bowls, or oven-safe ramekins, with olive oil, avocado oil, or coconut oil cooking spray. Let’s set it aside.

Combine all ingredients except walnuts in a small bowl and mix until combined. Sprinkle half of the nuts on top of each muffin.

Place one plate in the microwave. Cooking time will vary depending on the wattage of your microwave, but start by cooking for 1 minute. Check the center with a toothpick. It’s done when it comes out clean, otherwise cook for another 30 seconds. Repeat with second dish.

Once cool enough to handle, cut in half and toast.

Enjoy with butter and sugar-free strawberry jam or cream cheese.

Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.

How to use the oven

2 Grease an oven-safe ramekin. Pour batter evenly into greased ramekins. Bake in a preheated oven at 350 degrees F for 7 to 8 minutes. If you use real bananas, you may need to bake them a little longer, 10 to 12 minutes.
