Have you ever tried a delicious buffalo burger recipe? If not, there’s no time like the present. Bison meat is very lean, but there are still ways to make it juicier. I’ll share it with you in this recipe. Serve these delicious burgers with oil and vinegar coleslaw or dill potato salad for some fun.
Of all the game animals Scott has brought home over the years, bison is my favorite. Bison meat has no game flavor and tastes similar to beef. But an added benefit is that bison meat is better for you.
For the past three years, I’ve been working to perfect this buffalo burger (technically bison) recipe. It’s been a long time since Scott brought home 440 pounds of bison meat from a hunt.
After many tries, I was finally happy with this buffalo burger recipe. Who knew the missing ingredient was bacon fat? But don’t worry, I only use 1 tablespoon.

🧐 Why this recipe works
Bison burgers are delicious and easy to prepare! These bison patties can be prepared in advance and frozen until ready to eat. Bison patties are better for you than beef.
🔖 Materials and Substitutes
Bison Meat: Bison meat is very lean, so suet is usually added to the ground meat as a binding agent. I always add olive oil to my bison burgers. Bacon grease, rendered pork fat, or tallow can also be substituted. Egg: 1 egg to bind the mixture. Bread: I remembered my mother adding bread slices to the kofta kabab mixture since we didn’t have breadcrumbs on hand. A great alternative! Seasoning: Montreal seasoning, salt, black pepper, crushed red pepper flakes (optional).

🍔 How to make bison burger
Step 1: Combine all ingredients in a large bowl and mix by hand. Make sure the ingredients are well mixed
Step 2: Divide the meat in half, then into quarters, and finally into nine equally sized pieces. You will need nine 4-ounce patties.
Step 3: Use your hands or a hamburger press to form the meat into patty shapes. Place wax paper between the patties and freeze until ready to eat.
Step 4: Grill (in a frying pan or on the grill) for about 5 minutes on each side.
Pro tip: Don’t press the burgers while cooking. This releases all the juices and results in a dry burger.
Step 5: Top with your favorite burger toppings and enjoy.

Bison is low in fat and high in protein. The fact that it tastes so good is definitely an added bonus. There are many ways to make this bison burger recipe even healthier.
One way to make the recipe healthier is to replace bacon fat with olive oil. Or grill your burgers instead of frying them. Another idea is to replace the cheese with low-fat cheese or not use it at all.
As mentioned earlier in this article, bison meat is very lean. We’re trying to fix this problem by adding oil, eggs, and bread, but we have to figure out how to keep the bison burgers from drying out while cooking.
I love charred meat (burnt is okay, just kidding), but bison burgers should not be overcooked. For me, Medium is my happy place. Yours may be different, but be careful not to overcook the patty.

In the photo, the burger is served with bacon, but turkey bacon is also a great option. For even fewer calories, omit the mayonnaise and use mustard instead. My favorite way to reduce calories and carbs is to use Thomas Light English muffins instead of hamburger buns. It’s not as “bready” as a hamburger bun, and has fewer calories and carbohydrates, but you can still eat the bread. If you want to get your carbs up to speed, wrap your burger in butter lettuce. The soft leaves are the perfect shape and size for hamburgers. Do not press the burger while cooking. This releases all the juices and results in a dry burger.
