Since then, I’ve been playing with almond flour to create healthy and easy recipes. The story behind this almond flour muffin recipe is part of that journey.
I created this recipe in 2010 after reading Michael Ruhlman’s book Ratios. Shortly after, I saw Luhrmann speak on Blogher Food, and that experience changed my recipe creation process.
Self-care for celiac disease
But there was one problem with Luhrmann’s principles of proportions and recipes. He bakes with flour and gluten, which to me were impractical and useless.
Still, I was inspired to create a ratio recipe template for myself and for those of you who suffer from intolerances to foods such as gluten due to celiac disease. The ingredient I chose was almond flour!
Is almond flour gluten free?
I believe that almond flour is the best food for people suffering from celiac disease or on a keto diet. Here’s why:

After six tries, I created this keto muffin recipe using ratios (and a kitchen scale).
The ratio for muffins made with almond flour is 4 parts flour, 4 parts egg, and 1 part sweetener.

Not all baked goods recipes are easily expandable, but this one is very flexible. You can scale up or down to make as many muffins as you like. For 8 muffins, double the amount; for 2, cut in half.
