This keto biscuit recipe is adapted from my original Fathead Dough Cheesy Biscuits. The original fathead dough recipe makes 12 pieces and takes a little more effort to melt the cheese, but yields similar biscuits like Red Lobster.
Like this recipe, Keto Cheddar Bay Biscuits are high in protein and low in carbohydrates.
Today’s cheesy keto biscuits incorporate cottage cheese and don’t actually require butter, olive oil, or coconut oil in the coconut flour mixture.
These Keto Cheese Biscuits contain a total of 6 grams of carbohydrates, 131 calories, and 10 grams of protein.

Can I bake without a cast iron frying pan?
Yes, if you don’t have a cast iron skillet, you can also bake these low carb biscuits in a large baking sheet pan lined with parchment paper, or line a baking sheet pan with a silicone mat.
Can I use it instead of mozzarella cheese?
I haven’t tried this keto biscuit recipe with other cheeses, but I think cheddar cheese would be a good substitute.
I don’t know what the texture will be, but I think it will work and will make great keto cheddar biscuits. I don’t recommend substituting Parmesan cheese as you won’t get the same texture.
Can I use it instead of cottage cheese?
Cottage cheese provides the high protein content in these keto-friendly biscuits, and you can’t taste the cottage cheese at all, so I don’t see why you’d want to do that.
But if you want to replace it, we recommend ricotta cheese, which contains just as much protein.
Another option that I haven’t tried, but that might work, is sour cream like the one I use in my delicious cloud bread recipe. Or you can try plain Greek yogurt. We do not recommend replacing cottage cheese with cream cheese in this recipe.
Can I substitute coconut flour?
You will need more other keto flours instead of coconut flour. Coconut flour is dense and requires more liquid unlike other keto flours. 1/4 cup of coconut flour is about the same as 1 cup of extra-fine almond flour.

Instructions
Place all ingredients in a food processor and process until combined and forms a dough.
Use a 1/3 cup measuring cup to measure six dough mounds. Once the oven is preheated, remove the skillet and place the mounds in the center of the skillet, touching each other.
Bake in the preheated oven until golden brown, 13 to 15 minutes. Remove and let cool for 10 minutes. I spread a generous layer of butter on top of each roll and returned them to the oven for a minute or two to melt the butter. Melted butter on top of warm biscuits is delicious!
Leftover biscuits can be stored in an airtight container in the refrigerator for up to 3 days, or frozen in a Ziploc bag or freezer container on parchment paper for up to 3 months. Thaw before reheating. To reheat after removing from the refrigerator, microwave for 30 seconds before slicing and toasting, or heat in the toaster oven at 325 degrees for 5 minutes.
