Long before 2006, before I went on a low-carb, sugar-free diet, I loved warm bread pudding. When I went on a low-carb diet in 2006 and went gluten-free in 2012, I sadly thought the days of bread pudding were over.
But I realized that with a great low-carb bread, I could easily make a better version that I could enjoy without the guilt. That was how I first started creating a great low carb bread pudding recipe.
The first time I made this low carb bread pudding recipe was in November 2014!!
I decided it was time to update some old photos and also update the pumpkin bread recipe I started with. I decided to replace it with my new Keto High Protein Cottage Cheese Pumpkin Bread recipe and it worked out great.
Bread pudding doesn’t have to be full of sugar or high in carbohydrates to be just as comforting and just as delicious.
This easy keto bread pudding is the perfect low-carb dessert that will leave you completely satisfied using my newest and in my opinion best keto pumpkin bread recipe.
Pumpkin mix is made by adding fresh cream, eggs, and pumpkin spice to canned pumpkin puree!
I think this would make a great pre-made Christmas morning breakfast for the family.

According to the Chronometer app, 4 ounces or about 1/2 cup of traditional bread pudding contains 31.7 grams of total carbohydrates, 18.5 grams of sugar, and 1 gram of dietary fiber. You can get the highest high while on a keto diet and come out of ketosis.
There’s no need to feel FOMO (fear of missing out) while on a low-carb diet when you can make a great bread pudding at home.
This is something I’ve been doing since 2006, and in my opinion, the best way to overcome self-sabotage and FOMO is to recreate all your favorites in a low-carb way.

Can we make this dairy free?
Yes, this bread pudding recipe can be made with a few modifications needed for dairy-free options. To replace your cottage cheese pumpkin bread recipe, you should use this dairy-free cloud bread recipe.
Add pumpkin spice to the dry ingredients for bread. Also, replace the heavy cream in this bread pudding recipe with canned coconut cream, coconut milk, or unsweetened almond milk.
Can I change my low-carb sweetener?
You can use your favorite low-carb sweetener in my recipe. We have a great natural sweetener guide and conversion chart to help you choose different options.
I use monk fruit allulose brown sugar substitute in many of my pumpkin season keto recipes. Because we believe it gives the best results and is a great alternative to using brown sugar.
If you want to use another low-carb sweetener, you can, of course. I like using two types of keto sweeteners because it reduces the aftertaste.
For this reason, I also added pumpkin liquid stevia, but if you don’t have that or don’t like stevia, I recommend using another low-carb brown sugar sweetener.
I’ve been asked this a lot, so you can use coconut sugar, but even though coconut sugar is less refined than white sugar, it’s still sugar, and it still spikes blood sugar levels and causes cravings. Increase carbohydrates.

Can I use any kind of bread?
Since I chose to give this bread pudding a pumpkin pudding flavor, I decided to use my new cottage cheese pumpkin bread recipe, but you can also use your favorite low carb keto bread recipe.
I also recommend adding more pumpkin pie spice. If you’re not using keto pumpkin bread, probably double the amount.

Instructions
Cut the bread into cubes and place on a baking sheet, uncovered, on the counter to dry for 2 to 4 hours or overnight.
Preheat oven to 350 degrees.
In a large mixing bowl, whisk together all wet ingredients except the optional pumpkin seeds. Let’s set it aside.
Place the cubed bread in a baking dish.
Pour the egg cream mixture into the bread cubes.
Top with pumpkin seeds or chocolate chips if you like.
Bake for 30 minutes or until cooked through in the center, checking to see if a skewer in the center comes out clean and the top is golden brown.
Serve warm or cool, cover with plastic wrap and refrigerate.
Keep refrigerated until ready to eat.
Top with unsweetened whipped cream and unsweetened maple syrup.
Leftovers can be stored in an airtight container in the refrigerator for up to 7 days.
