How to make Skillet Greek Chicken Bites
Cut the chicken into cubes. Add Greek dressing, salt, and optional garlic powder to bowl. Stir well.
Preheat a large skillet over medium-high heat. Once hot, add the chicken and flatten it evenly. Cook chicken without moving for 5 minutes.
After 5 minutes, stir the chicken in the pot and cook for another 3 to 5 minutes, until cooked through and browned. Stir regularly.

I also really like this recipe that uses boneless, skinless chicken thighs. This is because it is okay to overcook it a little (cutting it into small pieces like this makes it easier to cook it).
What if I don’t have Greek dressing?
If you don’t have Greek dressing on hand, you can make your own Greek marinade by combining:
2 tablespoons olive oil 1 tablespoon red wine vinegar Juice of 1/2 lemon 1/2 tablespoon Dijon dressing 1 teaspoon Italian seasoning 1 teaspoon garlic powder 1/2 teaspoon salt 1/2 teaspoon oregano

yes! However, browning the skin requires the chicken to be in contact with the hot skillet, and overcrowding the skillet can make this difficult. For best results, we recommend only making 1 to 2 pounds of chicken at a time in a very large skillet.
